CREAM OF TARTAR | PRODUCT INFORMATION

Also known as Potassium Bitartrate (or Potassium Hydrogen Tartrate), Cream of Tartar is an acid
used in a wide range of food, industrial and cleaning applications. Usually a powdery solid it is a
by-product of winemaking and processed by tartaric acid.

Commonly applied within the food industry, it is used both as a stabilizer, anticaking agent,
thickener and a main acid precursor in baking powders. You can find cream of tartar being
commonly used in egg whites, whipped creams, bakeries and as a common additive in
vegetables to prevent discolouration when boiling. As mentioned, you will see this in many
baking powders, cream of tartar is usually combined with sodium bicarbonate in order to form
the basis – they combine to create the rise expected in baked goods.

A number of industrial manufacturers use Cream of Tartar as a general cleaning agent, whether
this is for cleaning brass and metals, a mild stain remover or even to remove stubborn rust from
metals, cream of tartar is a powerful tool in the right hands for cleaning.

Many henna-based dyes use Potassium Bitartrate as a base acid to react with the henna blends
and make the final product. Many pharmaceutical companies use it as a purgative also, but in
sparing doses to prevent any negative reactions. Finally, you can see it as a common chemical
pH buffer in many scientific tests and controls.
