The Good News on Kimchi!
Kimchi is a main side dish that lots of Koreans eat
with their meals every day. Kimchi is a spicy cab-
bage dish that is made with hot pepper powder
and other spices and is left for months to ferment.
The fermentation process allows bacteria to form
in the cabbage, which when eaten, is very healthy
for your gut and digestion! The bacteria help fight
off harmful toxins in your body and strengthen the
immune system. In addition to this benefit, kimchi
adds a good serving of vegetables to add to your
diet.
Rice Anyone?
Rice is a staple food of Korea. But, what a lot of
people don’t realize is that rice can be very un-
healthy when it is not eaten in the right way. For
example, a lot of people will normally opt for white
rice. Although delicious, white rice is a refined
grain and the body breaks it down very quickly like
sugar. White rice lacks a lot of key nutrients, such
as manganese, selenium, and most importantly
fiber. Most American college students don’t get
enough fiber in their diet every day. An easy way
to not fall into that category would be to switch
out your white rice for brown rice! If you must
eat white rice, try to combine it with beans or
vegetables (which you can buy at Mclanahan’s!) to
up your fiber intake.
