A. Concept
The researchers want to establish the Secret Garden Café in Silang Cavite. It is a
Garden themed café. The café serves different coffee drinks (hot and cold), gourmet
foods and desserts.A café is a type of restaurant which typically serves coffee and
tea, in addition to light refreshments such as baked goods or snacks. The term
"café" comes from the French word meaning "coffee". A café setting is known as a
casual social environment where you can find people
reading newspapers and magazines, studying, or chatting with others about current
events. It is known also regarded as a place where information can be exchanged.
DECOR
It was the sweetest, most mysterious-looking place any one could imagine. The
high walls which shut it in were covered with the leafless stems of climbing roses which
were so thick that they were matted together. There were other trees in the garden, and
one of the things which made the place look strangest and loveliest was the desk where
various drinks and pastries are served with roses decors had run all over them. This
secret garden cafe is located in the middle of the city that no one expected it but when
they were able to be inside it, it brings back the good old memories of their love stories
and any other memory that they made years ago.
FORM OF SERVICE
Our chosen form of service isAmerican or Plate Service. The food is served on guest's
plate in the kitchen itself in advance. All preparation for the food was made in the kitchen.
The food plates are then brought outside of the kitchen and will be served to the guest. It
is the common type of service in a coffee shop or café.

LOCATION
Our selected location is located in Silang, Cavite boundary of Tagaytay City. We chose
this location because we wanted a place that has an open air because of the concept of
a garden-like café. We wanted to build our café with a scenery of nature and for our
customer to feel the cold breeze of Tagaytay. This location is also perfect for our café
because Tagaytay is one of the most go-to tourist spot of many people.

Commercial Development
Secret Garden is located in Tagaytay , One of the most visited place near Metro
Manila. It is now a growing city wherein different establishments are being rise in a short
span of time. You can find food establishments such as Leslie’s restaurants, Café Vi O
La, rekados, Captain Tony’s Garden restaurant, and balinsasayaw. There is a lot of
banks nearby such as Metrobank, Bank of the Philippine Island (BPI) ,Philippine
National Bank (PNB), EastWest Bank, Union Bank, Chinabank,and Philtrust Bank.
There is a lot of hotels around the area and these are …………….. . In addition,
Tagaytay Medical Center is just 5 kilometers away from Secret Garden, there is also Dr,
Anillo General hospital and Estrella Hospital near the area.
With all of these establishments, Secret Garden is perfectly located in a developed area
where in can cater and gain possible customers.

Drainage
The drainage system of Tagaytay City is currently under the Malabanan
Services.
Malabanan has different services to offer to every houses and commercial units
of Tagaytay city. They have all kinds of plumbing repair such as Clogged Drains,
Clogged Toilet, Leaky Faucets, weak Water Pressure, Running toilet, Cleaning and
installation of septic tank, all kinds of declogging, siphoning of septic tank and also
draining of waste water. They can through this number (046) 413 1720
Communication
There are different telecommunication provider in Tagaytay City, these are Globe
Telecom, Bayan Telecommunications, Smart Telecom, cable Link and PLDT. All of
these provider gives fast and reliable service that can cater all the users around
tagaytay city.

Tagaytay City is under the proptection of Tagaytay City Fire Station located in

There are different retailers near the area, Santis delicatessen is the nearest with
just (4) four kilometres away from Secret Garden. There are two supermarkets nearby,
the Puregold Supermarket and Waltermart Supermarket are just few minutes away. In
addition, Public market is also reachable or also called the Mahogany Market. The
Secret Garden is absolutely in the location that can easily buy or get enough supplies.
Direct Competitors
Balay Dako it is a restaurant that proudly serves Filipino dishes and classic Tagaytay
food.
It is owned by Chef Tony Boy Escalante. It is located in Nasugbu High way, Tagaytay,
4120 Cavite. They serve from 6:00 am to 9:00 pm and with approximate of 1,200 pesos
per two pax.

Secret Garden is located at Tagaytay, where the tourist attraction like “Taal
Volcano” is located,
together with the cold weather. That’s why many tourists come our location to relax and
chill from their
stressed days. With that, we can easily reach our target income, since the location is
also accessible for everyone. We have a larger space for dining, where can
accommodate a large groups of people,
Family and relatives. Guests can feel the nice air and good ambiance since our dining
area is outside of
the restaurant. We are always making sure that our food is safe and well trained staffs.
Since, we have a same concept restaurant in Tagaytay. We have a lot of competitors
and we lack of promotion in social media. One factor of restaurant opportunity is the
entertainment. We give them a good ambiance, while enjoying a soft instrument music.
By that. We can make sure that guests. Will go to our restaurants even if it’s far away
from their places. There are similar concepts and services of our restaurants but we can
improve. Our weaknesses to be able to be satisfied our guests and might visit again our
restaurant and might be
well known restaurant in Tagaytay. Similar menu is also a threat.

Technical Components
A. Menu
This is the list of foods and beverages that consists of healthy ingredients and
seasoning which will be perfect for the garden-like concept of the restaurant
because it gives connection to the nature. Our restaurant offers different cuisine to
serve different variety of food to our customers.
Main Dish:
Seafood Paella - The restaurant presents the fresh sea foods from the lake that
would captivate the taste buds of every customer in the restaurant. It has Omega-3
fatty acids that are required for healthy human development. The chefs in Garden
Restaurant have taken the creative liberty to put together some of the most unique
and awe inducing dishes for even the most well traveled visitors.

Chicken Garlic Mushroom - The restaurant have an easy and delicious comfort
food at its finest. Lightly floured boneless chicken breasts are pan fried in butter and
oil until golden and crispy before being added to a mouth-watering garlic cream
sauce. Filled with caramelized flavor, the chef made sure that everyone will go home
with a fulfilled stomach.

is one of the Filipino favorite dish. The cut of pork belly in this dish is seasoned and
then roast until the skin is crisp, the outer layer is crunchy and the inside is still
tender. The words "melt in your mouth" are thrown around a lot in reference to pork
belly.
Appetizer:
Mushroom Spring Roll this recipe composed of freshly cut of vegetables. These
vegetables like carrots, mushrooms, beans sprouts is a necessity in a human body
as it supports our immune system. If you’re looking for healthy party food, this is the
great appetizer to serve for you.

Sweet Potato Empanada - The filling uses sweet potato as well as other veggies
and the empanada dough is a buttery and delicious. Sweet potatoes gives us more
nutrition other than people think because they are a good source of vitamins B and
c.
Onion Rings - Our restaurant offers this kind of appetizer. This recipe is composed
of onion that dipped into the batter or bread crumbs that makes the onion crispy. It
will not really taste onion because of the batter around the onion overwhelm the
onion flavour.

Pasta:
Aglio Olio - Means oil and garlic. This pasta is an olive oil-based it is rich in good fat
and cooked with fresh ingredients like garlic and chilli.
Sea Food Spaghetti - fresh mussels, shrimps and scallops are the best
combination with pasta together with its tomato sauce. Sea foods has a combination
of vitamins and minerals along with lean protein that is good to our body.

Salted Egg Carbonara - The soft, creamy texture of salted eggs goes perfectly with the
sauce. It has a nice combination of salty taste of salted egg and creamy sauce.
Chicken Pesto Pasta Freshly made pesto sauce with those fresh ingredients like
basil, pine nut, olive oil garlic and parmesan cheese which is good to our body that
gives healthy addition to any diet and it gives natural flavor of herbs.

Garden Salad Made with fresh vegetables in the restaurant’s backyard that are will
give everyone a fresh feeling. Lettuce, bell peppers, jalapeno peppers, all possible
varieties of tomatoes, peas, green beans, cucumbers (regular and pickling), carrots,
radishes, zucchini, pumpkins, gourds, melons (water and cantaloupe), and several
herbs are the best vegetables every customer will savior.
Pineapple Juice This is a delicious, healthy, nutritious and sweet flavored juice
drink that is no sugar and preservatives added and filled with health-related
advantages and benefits as it is full of with lots of numerous vitamins and minerals
which are very advantageous, beneficial, essential, important and significant on our
daily cleansing, cooling, filtering and refreshment.

Lemon / Red / Honey-blend Iced Tea This is a flavored sweetened cold tea drink
that has been chilled or cooled, blended and glazed with either lemon, red or honey
which will provide bursting, mouth-watering and zesting, freshness, refreshment and
relaxation, while consuming and taking our snack food products.
Four Seasons Juice This is the bursting, cooling, healthy and refreshing
combination of the different selections and variations of the numerous different
blended, flavored and seasoned sweet fruits in a form of a juice. The consumer or
customer that will acquire and purchase some of our product offerings will
experience and taste the tropics of orange, apple and grape flavors.

B. Management
General Manager who will be responsible for overseeing all of the restaurant's
operations, which includes hiring and firing staff, purchasing food, supplies and
equipment, and dealing with suppliers and vendors. The general manager also
oversees maintenance and upkeep of the dining areas, kitchen, and exterior
grounds of the restaurant; scheduling of staff; decisions regarding the menu;
budgeting, accounting, payroll, and other financial matters; promoting and
advertising the restaurant; and dealing with the legal and regulatory issues
involved in running a business. He/ She must have a good communication skill to
entertain customer’s demands. Must have a 4years degree of Bachelor of
Science in Business Administration or Bachelor of Science in Hotel and
Restaurant Management.
Head Chef- is the one who is responsible for Controlling and directing the food
preparation process and any other relative activities. Constructing menus with
new or existing culinary creations ensuring the variety and quality of the servings
and Approving and “polishing” dishes before they reach the customer. He/She
must be proven experience as head chef exceptional proven ability of kitchen
management, ability in dividing responsibilities, Leadership skills and monitoring
progress, Outstanding communication and leadership skills, Up-to-date with
culinary trends and optimized kitchen processes and a degree in Culinary Arts
with the Supervision of the head chef .
Chefs- to help and support making dishes in the restaurant. Chef responsibilities
include studying recipes, setting up menus and preparing high-quality dishes.
You should be able to delegate tasks to kitchen staff to ensure meals are
prepared in a timely manner. Also, you should be familiar with sanitation
regulations. Ultimately, you’ll prepare and deliver a complete menu that delights
our guests. Ability to remain calm and undertake various tasks Excellent time
management abilities, Up-to-date knowledge of cooking techniques and recipes,
Familiarity with sanitation regulations, Culinary school diploma preferred.
Steward who are assigned to wash dishes and equipment used by the chefs.
Waiters – they are the one who will accommodate our customers. They should
contain the following duties and responsibilities: Provide excellent customer
services, Always strive towards best customer satisfaction, Greet customers and
present menus, Make suggestions based on their preferences, Take and serve

food/drinks orders, Up-sell when appropriate, Arrange table settings, Keep tables
clean and tidy at all times, Check products for quality, Deliver checks and collect

should have experience as a waiter or waitress, Experience with developing a
constructive working and interpersonal relationships with colleagues and
customers, X years of experience with a cash register and any ordering
information system, Critical thinker and problem-solving skills, Good time-
management skills, Great interpersonal and communication skills, Active
listening, Good physical condition, Customer-centric, High school diploma; food
safety training will be considered a plus.
Security Guards –T-to ensure our customers safety we will be hiring that will
have a day shift and night shift. He/she should be Take accurate notes of
unusual occurrences, Report in detail any suspicious incidents, Patrol randomly
or regularly building and perimeter, Monitor and control access at building
entrances and vehicle gates, Watch alarm systems or video cameras and
operate detecting/emergency equipment, Perform first aid or CPR. The
requirements will be, proven work experience as a security guard or relevant
position, Trained security officer with diploma, Ability to operate detecting
systems and emergency equipment, Excellent knowledge of public safety and
security procedures/protocols, Surveillance skills and detail orientation, Integrity
and professionalism and High school degree

Motif
Our motif will be based on a Garden. We will give our customers a place for family and
friends that would go to Tagaytay to celebrate significant life events or just to simply
have meals together and experience the warmth and calming feeling that our garden
themed restaurant can give. The colors of our restaurant will be earth tones and greens
because according to color psychology green has a strong relation with nature and it
gives a soothing, relaxing feeling to someone who sees this color and helps to calm our
minds. This is why we came up with an idea of putting up a Garden Themed
Restaurant.

Decibels
The ideal sound for normal conversation is around 50-60. Our restaurant is an
open area and our ideal sound is 55-60 because we want our customers to feel at
home, having a good time with their friends or family.

Uniforms
For our uniform, we will use a light blue and green tone to emphasize our garden
themed restaurant. The female staffs will be wearing light blue long-sleeves, navy blue
pants and waist line apron, while the male staffs will be wearing also light blue long-
sleeves, navy blue pants and neck strap apron.
