To start (or finish) your day with a healthy juice, you might think
you need to invest in an expensive juice extractor. But a much
more common kitchen appliance — the blender — is all you need
to make these five juices from "The Ultimate Book of Modern
Juicing," by Mimi Kirk, a raw food expert who, glowing at age 77,
is a pretty solid poster-person for the health benefits of juicing.
"Blended drinks take minutes to prepare and the cleanup is
quick," notes Kirk, who adds that blended juices tend to be more
filling and supply more fiber than juices made with an extractor.
If you want to jump-start your day with a fresh juice but don't
have much prep time — and, really, who does? — Kirk suggests
washing all the ingredients for your juice the night before. Wrap
them in paper towels in an airtight container or zip-top bag in the
fridge. "In the morning just add water and the washed produce to
your blender," says Kirk. "In minutes you will have a delicious,
nutritious drink. Don't have time to clean your blender? Fill with
soapy water until you get home."
o 1 to 1/2 cups filtered water or green tea
o 1 cup spinach
o 1/2 bunch parsley
o 1 cup pineapple
o 1 celery stalk, chopped

Blend all ingredients, adding water as needed.

o 2 beet leaves
o 1/2 beetroot, peeled
o 1/2 pink grapefruit, juiced
o 1 carrot, scrubbed and cut in chunks
o 1-inch piece ginger, peeled
Preparation
Blend all ingredients in order listed in a
high-speed blender.
