Vadakari Recipe

Ingredients
Vadas

Chenna Dal - 1 Cup - Soak for 1 hr


Onions - 1 Medium - Finely Chopped
Salt and turmeric as adequate

Masala Ingredients

Onion - 1 Big onion (Cut thin and length wise)


Garlic - 10 pods

Masala Puree
(A) - Tomato - 3 medium (Puree in hot water and grind)

Paste Ingredients

Onion - 1 medium
Ginger - 1 inch
Red chillies - 3
Green chillies - 3
Garlic - 4 pods
Sombu (Fennel) - 1/4 Tsp
Cardamom - 3
Cloves - 3
Chenna Dal - 1 Tsp
Jeerra - 1/2 Tsp
Sugar - 1/2 Tsp

(B) - Grind all the Paste ingredients in a mixer into a smooth paste and keep aside.

Process
Vada Preparation

Drain Dal after soaking and grind coarsely. Then add onion, salt and turmeric and deep fry in oil until
soft. Do not over fry. Does not have to turn dark brown (like masala vada) golden brown will do .

Heat oil in a pan, add Masala Ingredients and fry till golden. Then add the paste (B) and fry.

Then add turmeric, salt, sugar and fry.

Then add Tomato Puree (A) and fry till oil separates.

Then add 3 cups of water and boil. Keep the gravy in slightly liquid consistency only.

Then add vada and boil until desired consistency.

Then add coriander and serve.
