Description of the Product

Etag (Dried and salted pork/meat)


Etag (igorot) or Innasin (iloko) – An Igorot food that is preserved small slab of meat (esp. pork)
made through salt-treating, sun-drying; and/or smoking. Its color is partly dark brown with
noticeable whitish yellow fat color. It comes from different varieties depending on the methods
used. There are three methods of making etag which are discussed in the procedures. Its
savory and salty taste made it a good seasoning ingredient for some foods.

Cordillera - We all know that etag is a term Cordilleran’s in the North used to call a slab or slice
of pork preserved in a traditional way. For most Cordilleran’s, they associate etag to a tasty pork
ham that can be used to flavor pinikpikan and other traditional delicacies. The making of etag
does not involve a complicated process and the main goal is to preserve the meat by salting
and either smoking or sun-drying.

No one could say that maggots are dangerous because it is actually a very good source of
protein, good fats and other elements. In fact, scientist is now looking into the possibility of using
maggots to produced textured protein or a sustainable snack for humans, according to
healthline.com. If you cook your etag before eating like most Cordilleran’s do like mixing them
with pinikpikan, it could be safe because cooking would kill the microbes, parasites and bacteria
present on the meat. However, the risks could not be guaranteed to be non-existent in cooked
etag. It is still advisable to consume only those etag that was properly preserved without the
presence of maggots. Researchers from the Philippine Council for Agriculture, Forestry and
Natural Resources Research and Development recommended to etag makers to add 180
grams of rock salt for every kilo of pork they make. Then they should arrange the meat on a
covered platter and allow it to cure for at least five days, after which the meat was either hot-
smoked for two days 16 hours or cold smoked for five days 56 hours. To ensure that no fly
could touch the meat, the dryer should be covered with polyethylene plastic.

China why? Because there is a saying that jokes that Chinese will eat everything that swims
except the submarine, everything that flies except the airplane, and everything with four legs
except the table. Eating with sticks and from skewers is the most common thing, and utensils,
except for the spoon to eat soup, are not part of the equation in fact, using them is not highly
regarded. In this sense, pretty much everything is served in skewers, from common food items
such as corn on the cob, eggplants or kebab shish, to scorpions, rat legs, chicken heads or fried
bugs, which can be easily purchased at street markets.

Process of Exportation
Exports of physical goods that move between bodies of water can be expensive and
risky if not done properly; therefore, in every scenario, the exporter must be aware of the export
documents used to ship the goods. Understanding these common documents is crucial to your
success abroad. Most importantly, including specific terms on how the goods will be shipped is
needed in the agreement for the benefit of the various people and organizations that will help
facilitate the movement of goods.

Commercial Invoice
When the international sale is complete and goods are ready to be shipped out, a commercial
invoice is the document used to describe the entire export transaction from beginning to end
including the shipping terms.

Packing List
A packing list is similar to a shipping list in that it lists the goods being shipping, information on
how it was packed, how the goods are numbered, and weight/height dimensions. Even though
it’s not always required, it’s an important document used by freight forwarders to prepare a bill
of lading and to understand how much cargo is needed.

Bill of Lading
The bill of lading is usually the first common document used in international shipment and it is a
contract between the owner of the goods and the carrier. It will state what goods are shipping,
where they are going and where the shipment started. In addition, once the shipment is picked
up, the bill of lading serves as a receipt issued by the carrier.
Certificate of Manufacturer
This is a notarized document certifying that the goods have been produced by the manufacturer,
fulfills the general product requirements and is ready for shipment.  

Certificate of Origin
This document is prepared by the manufacturer and is certified by a government entity or
chamber of commerce. It’s used to identify the country of the manufacturer where the goods
were made.

Insurance Certificate
For export shipments, this document certifies you have bought an insurance policy for cargo on
board. Insurance may be purchased because liability and large losses are a concern to the
exporter.

Dock Receipts
The purpose of this receipt is to provide the exporter with proof that the delivery of goods to the
international carrier was successful and in good condition.

Consular Invoice
A consular invoice is a form available through a consular representative of the country you’re
shipping to and it certifies the shipment of goods. It is not required in every country, but is used
to help many emerging nations facilitate customs and collection of taxes.
