Vader’s Meatloaf

Ingredients:

• 500 gr. beef needle meat


• ½ onion
• 1 carrot
• 1 zucchini
• 1 leek
• 1 clove garlic
• 1 glass of broth
• 1 of fragrant wine
• 1 celery stick
• 200 gr. peas
• HP sauce
• oil
• Salt
• rosemary
• ground pepper
• Mass: 175 gr. Of flour
• oil
• water, salt and sweet paprika

• Step 1:

• Step1: Dough: Mix the flour with half a teaspoon of sweet paprika
and half a tablespoon of salt. Heat the oil until it starts to smoke,
remove it from the heat, suddenly add the flour, stir and add the
water. Work the dough on the floured table, form a ball and let it
cool covered with a damp cloth.
• Step 2:

• Step2: Heat the oil in a frying pan, brown the seasoned meat,
remove it and reserve it. In the remaining oil, fry the leek,
zucchini, onion, garlic, celery and carrot, all chopped. Add the
meat, cover with the broth and cook over high heat for 45
minutes.

• Step 3:

• Step3: When the meat is there, add the peas, water with the
fragrant and reduce for a few minutes. Season with salt and
pepper and add the rosemary sprig and the sauce. Put everything
in a refractory dish, cover it with the thin spread dough and make
a hole in the center, place a fireplace and paint with egg. Bake at
180º until golden.
