Okoy with Cheese

Ingredients

1 CUP SQUASH, GRATED  

1/2 CUP MEDIUM SIZED SHRIMPS, HEADS AND SKIN REMOVED (USE THE WHOLE SHRIMP IF YOU HAVE SMALL ONES)  

1/4 CUP CARROTS, THINLY SLICED  

1/8 CUP GREEN ONIONS  

1⁄2 CUP FLOUR  

1⁄4 CUP CORNSTARCH  

1 EGG, BEATEN  

1/3 CUP WATER  

1 TBSP FISH SAUCE  

2 GARLIC CLOVES, MINCED  

1/8 TSP GROUND BLACK PEPPER  

1⁄2 CUP EDEN CHEESE, GRATED  

1 CUP COOKING OIL  

Method:

In a bowl, combine the flour, corn starch, egg, garlic, water, fish sauce, and pepper. Mix until free from lumps.

Add the squash, green onions, carrots, and shrimp.

In a frying pan, heat the oil and deep fry the fritters until crispy and lightly brown.

Once cooked, drain the okoy fritters on a paper towel. Top with grated Eden Cheese while hot then serve.
Cheesy Pancakes
Ingredients

2 CUPS FLOUR  

2 EGGS  

2 TSP BAKING POWDER  

2 1/2 CUPS MILK  

1/2 CUP COOKING OIL  

EDEN CHEESE, GRATED  

PANCAKE SYRUP  

1/2 TSP SALT  

Method:

Sift all the dry ingredients together.

Add the liquids gradually. Mix well.

Heat oil in a pan. Scoop in the batter.

Sprinkle a generous amount of grated Eden cheese on top. Serve with syrup.
Ham and Cheese Roll-ups
Ingredients

8 SLICES BREAD  

8 SLICES HAM  

8 SLICES EDEN CHEESE  

1/4 CUP PIMIENTO STRIPS  

3/4 CUP BREADCRUMBS  

3 PCS MEDIUM EGGS, BEATEN  

2 CUPS COOKING OIL  

Method:

Remove the ends of the bread. Put the ham, Eden cheese, and pimento strips on the bread. Roll the bread until the
filling is covered. Secure it with a toothpick.

Dip the bread in the egg and coat in breadcrumbs. Shake off excess crumbs.

Fry over low to medium heat for 5-7 minutes until golden brown.

Arrange the fried rolls in a plate lined with paper towels. Serve as a snack or slice into pieces and serve as an appetizer.
Spanish Sardines Pasta with
Cheese
Ingredients

1⁄2 KG PASTA, COOKED ACCORDING TO INSTRUCTION  

2 CANS SPANISH-STYLE SARDINES (INCLUDE THE OIL)  

1 MEDIUM-SIZED GREEN BELL PEPPER, CHOPPED  

1 MEDIUM-SIZED RED BELL PEPPER, CHOPPED  

1 MEDIUM-SIZED ONION, CHOPPED  

1 MEDIUM-SIZED TOMATOES, CHOPPED  

2 TSP OLIVE OIL  

SALT  

PEPPER  

Method:

Saute onion, tomatoes, and bell pepper in butter.

Add Spanish-Style sardines, salt, and pepper. Simmer for about a minute or two.

Add the cooked pasta and toss it until fully coated with sauce. Serve topped with grated cheese.
Cheesy Sizzling Hotdog
Ingredients

5 JUMBO HOTDOG, SLICED DIAGONALLY  

1 LARGE WHITE ONION, CUT INTO RINGS  

1/2 CUP EDEN CHEESE, GRATED  

1/2 CUP TOMATO KETCHUP  

1 TBSP HOT SAUCE (OPTIONAL)  

1/4 CUP BUTTER  

Method:

In a pan, heat the oil then saute the hotdogs.

Add tomato ketchup and hot sauce, then stir well. Add the onions then cook for a minute.

Heat the sizzling plate then grease it with butter. Put the hotdog mixture then top with Eden cheese. Serve and enjoy.
