DESSERTS

AMERICAN DESSERTS:

1. Warm Apple Pie a la mode. Served with vanilla ice cream

2. Baked Alaska. Also known as Bomba Vesuviana or Norwegian Omelet. Three flavor ice
cream (usually vanilla, chocolate and strawberry) covered with meringue (egg whites
mixed with sugar). Then it is slightly burnt with a blowtorch or sometimes quickly baked.
It is a combination of hot and cold.

3. Chocolate Pudding with whipped cream. Chocolate mousse from kids’ menu.

4. Low-fat Berry Mousse. Light strawberry and blueberry yogurt mousse accompanied by
low-fat vanilla sauce.

5. Banana Split. Combination of three flavors of ice cream (vanilla, chocolate and
strawberry), sliced bananas and different toppings such as caramel, fudge (chocolate sauce),
candied fruit, almonds or raisins.

6. Black Forest Cake. Flour, butter, chocolate, whipped cream, jam. Garnish: Cherry

7. Almond Raspberry Tart. Light dessert of pastry and fruit.

8. Low fat Blueberry & Peach Cobbler. It is a warm dessert topped with vanilla ice cream.
It contains peaches, blueberries, sugar, cinnamon, butter, flour, cake crumbs and mint
leaves for garnish.

9. Savarin or Rum Baba. Sponge cake soaked in rum. It contains whipped cream, mandarin
orange segments, strawberries, Grand Marnier, lemon, mango sauce, kiwi fruit.

10. Cherries Jubilée. Flambées cherries in cherry sauce flavoured with Herring Cherry
liqueur and flamed with Kirshwasser.

11. Low Fat Angel Food Cake. It is a soft cake that is made of egg whites, cake flour,
sugar, cream of tartar, strawberries, and strawberry purée.

12. Key Lime Pie. Condensed milk, lemon or lime juice, egg yolks and crust.

13. Warm Chocolate Cake. It contains butter, sugar, dark chocolate, eggs, egg yolks, flour
and Brandy.

14. New York Cheese Cake. Heavy cream, eggs, egg yolks, ricotta, cottage or cream cheese
and lemon.
FRENCH DESSERTS:

1. Bittersweet Chocolate Soufflé. Soufflé is a mix of egg whites, butter and sugar. It is a
lightly baked dessert. It contains flour, eggs, sugar, margarine, milk and bittersweet
chocolate. We can also find Passion Fruit Soufflé or Grand Marnier Soufflé. All soufflés
are served with sabayon sauce or vanilla custard sauce which is made of vanilla bean,
whole milk, granulated sugar and egg yolks.

2. Crêpe Suzette. Thin pancakes (flour, butter, milk and egg yolks) flambés in a mixture of
Grand Marnier (orange liqueur) orange juice, lemon peel and sugar. It is flamed with
Cognac and served with vanilla ice cream or champagne sorbet.

3. Raspberry Crème Brûlée. It is a French dessert which means burnt cream, because
brown sugar is burnt just before serving with a blowtorch or baked. It is also called Crema
Catalana and is made of eggs, sugar, milk, heavy cream, whipped cream, framboise
(raspberry) liqueur, vanilla extract or bean, fresh raspberries.

4. Banana and Crunchy Nut Parfait. Parfait (perfect in English) is a frozen ice cream,
known as Semifreddo in Italy. We also have mango parfait, coconut or strawberry parfait.

5. Belle Helene. A dessert with poached pears, ice cream and chocolate sauce.

6. Éclairs. Same as profiteroles but with a long shape.

7. Flan. Made with milk and eggs. Same base than caramel custard without caramel.

8. Peach Melba. Poached peach halves are served with vanilla ice cream and topped with
fresh raspberry sauce.

ITALIAN DESSERTS:

1. Tiramisú. “Pick me up”.Italian cheesecake made of mascarpone cheese, heavy cream,


egg yolks, ladyfingers (biscotti), Kahlua (Mexican coffee liqueur), Amaretto, Rum, and
Brandy, topped with cocoa powder. Garnish: Vanilla raspberry sauce.

2. Raspberry Panna Cotta. This light Italian dessert that means Cooked Cream, is a light
mixture of cream, milk, sugar set with gelatin and served cold.

3. Chocolate or Strawberry Semi-freddo. Also called Parfait by the French. It consists of


coffee beans, heavy cream and mascarpone cheese. It is a frozen ice cream usually made
with gelato which is a lighter version of ice cream. Parfait is a French dessert.
4. Crostata di frutta. It is a sugar free dessert, made of flour cubed at room temperature,
sugar, egg yolks, vanilla extract, lemon zest. It is also known as Red Berry Tart (SF dessert)

5. Cannoli alla Sciliana. Traditional Italian dessert from Sicily. It contains ricotta cheese,
Marsala wine, orange peel and lemon confit, candied fruit, sugar, vanilla extract. It has the
shape of short tube made of flaky pastry.

6. Zuppa Inglese. Sponde cake made of milk, sugar, egg yolks, flour, semisweet chocolate,
cinnamon, vanilla extract, orange peel.

7. Mille Foglie. Thousand leaves, also called Napoleon is a delicate puff pastry in layers
filled with cream patissiere or other fruit filling.

8. Cassata alla Siciliana. Ice cream trilogy with candied fruit.

FROM OTHER COUNTRIES:

1. Apple Strudel. From Vienna (Austria). Warm dessert served with vanilla ice cream, very
similar to Apple Pie a la mode. Served with Vanilla Anglaise sauce.

2. Crema Catalana. It is a custard (flan) typical from Spain and very similar to Crème
Brulée.

3. Baklava. Turkish dessert made of layers of delicate pastry (semolina flour, oil and eggs),
almonds, pistachios, walnuts and whipped cream. They are cut into triangles before serving.
It is finalized with syrup or honey flavoured with rose water.

4. Traditional English Trifle. It is a sponge cake soaked in sherry wine with gelatin. It also
contains fruit cocktail, cream, almonds, heavy cream, mint, fresh strawberries, and
chocolate shavings.

5. Sacher Tart. Chocolate cake filled with apricot jam, then covered with chocolate frosting.
