AstilleroVerde is situated at the end of the Bellbird Biological

of the Golfo de Nicoya. In part, the tree planting efforts aim
to support re-establishing the biodiversity lost to farmland

focuses on such a positive initiative, it gives hope and a deeper
purpose for the future. It allows for productive time outdoors

Conceptualized amidst the jungle, the project aims to support

schooner waterborne and ready to be loaded with ethically-

AN ECO-FRIENDLY LIFESTYLE, A NECESSARY
OPTION FOR SURVIVAL AUTHOR: CHEMA MEDINA

T he Limits to Growth was published in 1972 by the

Massachusetts Institute of Technology (MIT), the best
university in the world, at the request of UNESCO. This
report was the first global reference on the condition of the
planet. It allowed us to see that the “lifestyle” of society had
a limit, in addition to jeopardizing humanity’s survival.

During those years in the world economy, gold stood out

as an economic reference, and the ‘fiat’ currency was
established, which is governed by the State on a fiduciary
basis and which exposed the economy to a global crisis.
This situation weakened the stability of society, confirming
the urgency towards a change in lifestyle.

At this time, I decided to look for a more logical option in my

“lifestyle”. It was not what I would have preferred to do, but
a change was presented as a necessary option. To finance this ‘lifestyle’, we did it with tourism as a guide and

W hen I lived in Costa Ballena, I loved to snorkel on Isla Ballena and Las

landscapes of the underwater world of our Marino Ballena National Park.

So, I listed the species that I saw frequently, recorded them in my memory,
and, through paintbrushes, I started to let the watercolor flow to recreate
this underwater scene.
The inspiring ones were my friend Spanish friends Gema and her daughter
Ágata, who are great lovers of the sea. They love to spend hours and hours
with their heads underwater, equipped with tubes and masks. With this
illustration, I wanted to invite you to know some of the fauna species that I
like the most in Costa Ballena, such as the olive ridley and the brown booby
that rests on it.
Near the water’s surface, an angry pufferfish also floats, appearing with its
bloated and stinging body. With its elongated face, the triggerfish is one of
my favorites, along with the Moorish idol, who became famous in Finding
Nemo for being locked in a fishbowl.
On our coasts, I have met people who fish our beautiful blue-green parrotfish
that feeds on corals and what it excretes becomes part of the sand on our
seabed and beaches. I prefer to see them swimming and keeping our reefs
clean and healthy.
On our Island and never missing in any dive, the funny lemon butterflyfish,
as well as the little flag flask, with its body furrowed by those dark vertical
lines that swim very close to bathers without any fear. What an illusion
when one finds a starfish-like the Phataria.
This diversity of species would not be possible without the presence of
the last animal present in the illustration: the Porites lobata coral colony,
which massively covers the rocks, creating the perfect space for this rich
underwater biodiversity.
This illustration has won the ‘Colors of the Oceans’ contest displayed on

organization.

!VIVAN LAS FERIAS!

A s restrictions keep feria doors closed, we are all missing our
weekly visits to these community spaces. The feria is where
we get to support local farmers and enjoy the abundance of
fresh foods they provide. It is a place for us to connect and
share with our community.
Thanks to the dedication of the people behind the ferias, we
are still able to enjoy access to nourishing foods through their
online delivery platforms.
Let’s remember that not long ago we had to drive all the way
to San Isidro to have access to the limited organic produce
available each week. Today, thanks to the hard work of a few
individuals and the team behind Vida Autentica, the number
of farmers producing organic foods across our region has
expanded exponentially.
Now is the time for each of us to remember that the reason
that we have access to organic farmers and their bounty
is thanks to our local ferias. As we buy our fresh fruits and
vegetables each week, let us appreciate those that went
out into the community and empowered organic growers to
share their knowledge so that a network could be developed
and connected. That would be the foundation of our local
markets.
The people behind Vida Autentica and our local ferias worked
hard to connect and uplift those in our community looking for
a better way to grow food to feed their families and neighbors.
They have dedicated countless hours to developing a network
of sustainable and responsible growers that could connect
across regions to bring our community their organic harvest.
So this is a call to action. Let’s remember how much our ferias
have given us and consider the impact of our choices. Buy
from your local farmers’ markets and help support the long
term health of these pillars of our community.

You can order for delivery every week from the Feria

Alligator Snapping Turtles are not active swimmers

like the Caimans. Instead, they stay motionless or
walk on the bottom of the pool, but occasionally they
stick out their noses out of the water for breathing.
They rely on their camouflage, but once molested
they will strike, their long necks give them a long

The Black Wood Turtles love swimming or basking

HAVE SOCIAL
BUBBLES
AUTHOR: JACK & NATALIE EWING

W hen 2019 came to an end, the world had not

put the words “Social” and “Distancing” or “Social”
and “Bubble” together. In less than six months,
most of the world has adapted in one way or
another to prudent social distancing and to stay
within our social or family bubble. The practice
of staying near home within one´s territory, and
socialize only with close family members, is
something that wildlife does all of the time.

The collared peccary mark their territories and live

in small herds that rarely exceed 15 individuals.
Troops of monkeys are about the same size, and
also territorial.

Puma males, females, and grown cubs are seen

alone and always within their territory. For all
three of these species, the boundary defines the
limits of the “Social Bubble.” All wild animals have
some form of “Social Bubble,” and seldom do you
see a sick one.

If something causes this instinctual social distancing

to fail or be overridden by an extraordinary
situation, the results are often severe.

About 15 years ago, before the coastal highway

was built, there was a roadside fruit stand north
of the Barú River bridge. Coatis started hanging
around there, at first eating discarded fruit, and Ecological tourism allows us to experience the jungle,

of going to the location to get fed. The lure of free Visit Hacienda Barú, Costa Ballena, and Osa! While you

coatis at a time feeding or begging for food.

After a couple of months, some of the coatis

started looking sickly, and a month after that, they
were all dead, as a consequence of leaving the
“Social Bubble.”

Especially the South of Costa Rica is known for

its great natural beauty. Many family groups are
getting together, enjoying flora and fauna of our
28 beautiful country, yet remaining safely within their 29
social bubbles.
LIVING WITH THE ESSENCE OF NATURE

their families and maybe a little bit extra to
sell at a farmer’s market or roadside stall.
They have learned how to work this land over

natural way of life is what keeps Osa so clean
and green.
The spectacular and diverse ecosystems
found within Osa are likely what drew the
first nature lovers to settle this region. It
has a unique geological history that makes
it home to a nearly unparalleled amount of
biodiversity. This small corner of Costa Rica is
where you can find 2.5% of the world’s total
biodiversity across less than 1/1000th of the
world’s landmass. It is one of the last places in
Costa Rica to have been settled and continues
to be sparsely populated, covered largely in
magnificent virgin rainforest.

Osa has the most significant wetland

CULINARY - UVITA Y ALREDEDORES
THE ORIGIN OF THE
HAMBURGER AUTHOR: DAGMAR REINHARD

E ric, a renowned chef from New York, together with his Brothers Richard and Maurice McDonald ventured into
selling hamburgers at their McDonald’s restaurant, which
team opened his Five Maes restaurant in March of the
current year in Uvita. Five Maes’s emphasis is on locally would later become a franchise. Soon after, in 1954, Burger
sourced ingredients, from meat, dairy and even vegetables. King, its main competitor, emerged.
The burgers are homemade with 100% ground beef. All
the bacon, ham, sausages are made by Eric’s team. Visit Five Maes and try the delicious, hot round slice of your
choice!
There is something for everyone, including vegan and
vegetarian options that are part of the extensive menu. And Mae if you prefer you can order to take it home.
The location of the restaurant could not be better: on the
Costanera, near the entrance to the Marino Ballena National
Park, next to a bus stop and with ample parking in the new
Pacific Pool building.

However, there is no doubt that the hamburger originates

from Hamburg, Germany, just as the “frankfurter” has its
genesis in the city of Frankfurt. A Wall Street Journal article
revealed that a hobbyist can find them succulent in any city
in Europe and that Europeans are the legitimate heirs to the
burger throne.
Made with round bread, the burger was a centennial local
pork sandwich called Rundstück warm which, translated
from German, means a “hot round slice”, it is a snack
consumed by dock workers.

In Hamburg there are several restaurants, some dating

back to 1718 that serve this proto-hamburger. It seems to
be the mother of hamburgers, the ancestor of the modern
hamburger similar to the Big Mac and Whopper.
The burger boom is in the United States. German
immigrants from the late 19th century introduced the dish
called Hamburg-style American fillet to the United States.
It was in the 20th century when it had its greatest growth,
along with the so-called “fast-food” concept. Today the
burger is one of the flagship foods of American food and
can be found in versions such as stuffed with liver pate or
truffle and even in the most luxurious restaurant at more
than US $ 20. 51

HELLO,
FROM BEAUTIFUL
DRAKE BAY.

A s a small town that depends exclusively on tourism, AUTHOR: CAPITÁN WILLY ATENCIO
the present circumstances certainly hit us hard.
On the bright side, we have no cases in the village, and I
am very proud of my neighbors, who have followed the
social distancing and hygiene rules.
We are beginning to see the light at the end of the tunnel
as we have a limited re-opening of hotels, restaurants,
and some beaches. As a company that focuses on sport
fishing, we have had to shift our time and attention
elsewhere.
Shortly after the shutdown of the country, we started
raising money to feed families in need. We reached out
to our loyal fishing clients and friends from all over the
world for donations. The response has been incredible.
We have had the privilege of providing 120 baskets of
food and supplies over the last few months.
We loaded up the pickup truck and delivered the baskets
directly to their homes. This has been a very rewarding
experience for us.
When we can fish, the Reel Escape and the Reel Time
will disinfect all the equipment we use and ready to go.
We have received a few reports from people who have
fished on their own, they said “the fish are everywhere.”
As we approach the last six months of the year, we expect
to catch Roosterfish, Grouper, Snapper, Amberjack,
Wahoo, and small Tuna near shore.
Offshore we will target Black and Blue Marlin, big Yellow
Fin Tuna and Big-Eye Tuna, Sailfish and Dorado. As
sport fishermen, we make our living on the water, so
clean oceans and sustainable fishing are vital to us. For
any fish, we are going to release, such as Roosterfish,
Sailfish, and Marlin, we only use circle hooks, which
cause the least amount of damage.
Needless to say, we can’t wait to get back on the
water. When we do re-open for business, we have a
promotion of 15% off all trips for Costa Rica residents
until December 1, 2020.
We pray that everyone remains healthy and safe. If we
continue to follow the rules and support each other, we
will be able to return to “normal” sooner than later.
