g r a d e to a c o n s t a n t f i g u r e of 150.
In t h i s c o u n t r y a p p r o x i m a t e l y half of the p e c t i n c o n s u m e d i s u s e d
i n jelly a n d j a m s . T h e b a l a n c e i s u s e d p r i m a r i l y i n food p r o d u c t s a n d
in pharmaceutical compounds.
E A R L Y PECTIN
H i s t o r i c a l l y i t i s a s s u m e d that p e c t i n w a s f i r s t developed f r o m
a p p l e s o r apple juice. You m a y r e c a l l when we a d d e d a liquid " C e r t o "
o r s i m i l a r gelling a g e n t to h o m e m a d e jelly o r j a m to i n s u r e t h a t i t
would f o r m a f i r m gel on cooling. T h i s w a s a n a p p l e p r o d u c t i n which
pectin was made available f o r domestic and c o m m e r c i a l use.
T h i s d e m a n d f o r d r i e d p e c t i n p e e l h a s c r e a t e d a new b y - p r o d u c t f o r
o u r c i t r u s p r o c e s s i n g p l a n t s . Methods u s e d i n p r o d u c i n g d r i e d p e c t i n
p e e l will be d i s c u s s e d l a t e r i n t h i s p a p e r .
P E C T I N F R O M CITRUS
In c i t r u s , p e c t i n o c c u r s m a i n l y a s p r o t o p e c t i n - - i n the white i n n e r
r i n d (Albedo), i n juice s a c c e l l w a l l s , and i n F i b r o - V a s c u l a r bundles.
And the l e m o n i s a p a r t i c u l a r l y valuable s o u r c e of t h i s u s e f u l c o m p l e x
carbohydrate.
T h e s e p r o c e s s e s p r o d u c e the r a p i d and s l o w s e t t i n g p e c t i c s u b s t a n c e .
O r d i n a r y high methoxyl p e c t i n d o e s not f o r m t h e r m o - r e v e r s i b l e g e l s
like t h o s e of gelatin, but r a t h e r f o r m s a gel only a t pH v a l u e s below
about 3 . 5 a n d i n the p r e s e n c e of m o r e t h a n 40 - 50 p e r c e n t of a dyhy-
drating substance.
In j e l l i e s o r j a m s , the time r e q u i r e d f o r i n c i p i e n t g e l a t i o n , a f t e r a
s u i t a b l e cooking p e r i o d , i s the "setting t i m e . I' J a m s c o n t a i n i n g f r u i t
o r b e r r i e s m u s t s e t r a p i d l y while s t i l l hot to p r e v e n t floating of f r u i t .
T h i s plant n o r m a l l y p r o c e s s e s l e m o n s about e l e v e n m o n t h s e a c h
y e a r . P r o d u c i n g l e m o n juice, c o n c e n t r a t e , b e v e r a g e b a s e s , cold
p r e s s e d a n d d i s t i l l e d o i l s , d r i e d c i t r u s pulp ( c a t t l e f e e d ) a n d v a r i o u s
types of p e c t i n . On o c c a s i o n , o r a n g e s a r e p r o c e s s e d t h r o u g h t h i s plant
when a s s o c i a t e p l a n t s a r e o v e r l o a d e d . The p e c t i n r e c o v e r y s y s t e m i s
a 24 hour o p e r a t i o n while t h e juice p l a n t n o r m a l l y i s on a n 8 o r 1 2 h o u r
daily s c h e d u l e .
1. P e e l i s w a s h e d i n a m i x i n g type s c r e w t r o u g h to r e m o v e a s
m u c h of the c i t r a t e s a s p o s s i b l e .
7. In f i l t e r - a i d m i x i n g t a n k s , diatomac,eous e a r t h i s m i x e d a t
a p p r o x i m a t e l y 250 pounds to 2500 gallons and t h i s m i x i s
pumped through p r e s s u r e leaf f i l t e r s until c l a r i f i e d . T h i s
c l e a r l i q u o r i s then cooled to 3 0 ° c . , in a cooling t o w e r o r
in a p l a t e type e x c h a n g e r .
8. T h e cool p e c t i n l i q u o r ( 0 . 5 to 0. 6 p e r c e n t p e c t i n ) i s then
blended in s t o r a g e t a n k s to a s s u r e u n i f o r m i t y i n s u b s e q u e n t
process.

solution and s o d i u m c a r b o n a t e solution i s a d d e d until a pH

The a l u m i n u m s a l t h y d r o l y z e s in the p e c t i n l i q u o r f o r f o r m a
b a s i c s a l t that s t a y s i n solution until the pH r e a c h e s 3. 5,
when a l u m i n u m hydroxide f o r m s . T h i s c o l l o i d a l a l u m i n u m
hydroxide then c o - p r e c i p i t a t e s with the p e c t i n i n the f o r m of
a y e l l o w i s h - g r e e n c u r d : About the s i z e and s h a p e of an
a p r i c o t s e e d , with the f e e l of waxy modeling c l a y just too
wet to c r u m b l e .
