1. SHORT CUT PASTA LINE 500 Kg/hr

Length: max. 50mm

Guaranteed shape:the agreed shape; it will have adequate specific weight, thickness and
length. Output 500 kg/hour. Hourly capacity can vary +/- 10% depending on type of pasta (raw
material, shape, die, etc.)

Our line can produce shapes with more than 1,1 mm wall thickness and less than 400 kg/
m3 specific weight with a consequent reduction of production capacity (the dies for these
shapes are excluded from the supply).

The final running test of the line will be performed with reference to the pasta shape agreed
between the Supplier and the Customer having the over mentioned characteristics.

Raw materials to be used:

- 100% durum wheat semolina;


- 100% soft wheat flour:
- Mixtures of durum and soft wheat.

The production capacity of the line is to be conventionally referred to:
• Dry product, with final humidity not superior to 12,5%.
• Continuous and uninterrupted production of the guaranteed shape for 24 hours.

The guaranteed production capacity depends also on the following conditions:


• Semola or Soft Wheat, used as raw material, obtained from grinding of durum wheat or soft wheat
or mixing, cleared from foreign substances and impurities, conforming to the norms concerning
wellpreserved products allowed for the pasta process and for the preparation of foodstuff for human
beings, having the following characteristics:
□ Minimum protein (dry substance) content: 11.5 %.
□ Good quality proteins.
□ Absence of grains with size above 500 microns.
□ Product humidity 15%
In case of flour percentages superior to 60%, the Chopin alveographic analysis must have the
following values:
W = 180-200 P/L = 0,5 – 0,6
The raw materials temperature shall not to be superior to room temperature.

• Drinkable Water for the dough, having chemical and physical characteristics conforming to the
norms of the World Health Organization, and in particular:
□ Free from suspended solid substances having dimensions bigger than 5 microns.
□ Presence of chlorides: less than 30 p.pm.
□ Potable, colourless.
□ Minimum pressure 1,5 bar, maximum 2 bar.

• Hot oil at a temperature no lower than 90°C, for feeding of all technologic heating control systems
should be ready to connect to the line.

• Chiller cold water at a temperature no higher than 18°C for feeding of all technologic heating
control systems present in the line.

Without any specific request, everything that is described in the present offer will be
builtaccording to U.E. Normative.

The environment conditions and patterns inside the pasta factory must be controlled in order
to obtain a temperature not lower than 28°C and a relative humidity between 50 and 65%.

2.3. Automatic Vacuum Press

Sifted flour gets to the high-


speed mixer through vacuum
sluice- batcher of flour. Required
amount of water is fed to the
same place from a reservoir with
a set automatic water heating
system.
In the high-speed mixer water
is preliminary mixed with flour
under high revolutions. After the
high-speed mixer dough gets
into kneading bunkers of the
main kneading machine of the
press, where the process of
kneading and ripening takes
place. From the kneading
machine dough is picked out by
screw and extruded through the
extrusion die, inserts of which
determine the shape of a
specific product.

- Supporting machine of the extruder (for safe operation) is completed with high-quality
bearings intended for heavy load.
- In the extruder the cooling jacket for the press’ body cooling is foreseen. Press is completed
with chiller for ensuring uninterrupted circulation of cold water in the press along the closed
contour;
- For extrusion die removal a hydraulic cylinder is foreseen;
- For the excellent shape and length in the pre-extrusion die zone compensating plates
(individually for each extrusion die) and net filters (for filtering and getting homogeneous
dough) are installed;
- Press is completed with vacuum pump with filter made by Italian manufacturer.

Press automation system


Press works in the fully automatic mode. For the press control PLC- controller is foreseen:
- it controls dough level in the bunkers;
- dough moisture regulation by operator is foreseen;
- water and flour are fed automatically;
- water temperature is set by operator and maintained in the automatic mode;
- extruder’s screw revolution control system is foreseen;
- temperature of extruder’s body is set by operator and maintained in the automatic mode;
- pressure control in pre-extrusion die chamber is realized by pressure sensor that when reaching
pressure more than 130 atm. decelerate the revolutions of screw (and informs about this on
operator’s screen). And when reaching 160 atm. turns the press off and the emergency lights;
- knife revolutions control.

Also the following emergency and informative signals are foreseen:


- no flour in batcher
- no water in tank
- low temperature of water in tank
- low pressure in the system of water feeding into the press
- low level of dough in dough kneading machine
- dough kneading machine overfill
- high pressure in extruder
- high temperature of extruder’s body
- low vacuum
- drives failure (heat relays) etc.

Extrusion dies
In order to get high quality of pasta with correct shape we
complete press with extrusion dies and inserts of the best
European manufacturers.
For Penne production a separate machine is foreseen.

2.7 Vibrating pre-dryer (trabatto)

After the press pasta gets to the preliminary vibration dryer (trabatto), where the
surface of pasta is dried in order to prevent sticking and retain shape, brightness and colour.
Before feeding to the main drying chamber the humidity of product is reduced in trabatto by
approximately 3%.

Drying complex
After trabatto pasta gets to the stacker of the drying chamber by the elevator.
- Conveyor drying chamber is insulated by polyurethane sandwich-panels;
- Conveyors of the dryer are equipped with plastic net with a special size of cell for better circulation
of the hot air in a chamber;
- Drying complex id divided for several drying and stabilization zones with different temperature
modes;
- To maintain proper drying conditions, steam generators are provided inside to add steam to the
dryer;
- The possibility of regulation of the product level on each conveyor of the drying chamber is
foreseen;
- Heat carrier in the dryer is a hot oil. For better quality of pasta we apply the low-temperature drying
technology;
- Air temperature and humidity in the dryer is set by operator and controlled in the automatic mode.

Storage hoppers system

Depending on the chosen line we install a


system of storage hoppers with pasta flow
distributors. Pasta fills in the hoppers little
by little and there it passes the process of
stabilization before packaging. In the
system a branch conveyor for the feeding
of ready products to the packaging is
foreseen. A spiral is provided inside the
hopper for smooth filling of the hopper
volume.

WARRANTY

In all pasta lines can be used both semolina flour from durum wheat or white flour from soft wheat.

- The guarantee of machines and equipment is 12 months from the beginning till start up of
the system.
- Customer should conform instructions and obligations to operate the line within warranty.
Seller will not be responsible for any material wear that cause defects, negligence and
professional faults within maintenance and operation in case of improper use.
- The necessary maintenance and lubrication instructions during the warranty will be given by
a chart and customer has to strictly comply this instructions.
- The warranty will be invalid in case of any modifications which might be made without
confirmation of UTF.

The short cut macaroni line works as continuous system.


The control panel and electrical motors will be chosen from CE certificated brands andsuppliers.
The production capacity of the line is to be conventionally referred to;
□ Dry product, with legal and not superior to 12.5% humidity.
□ Continuous and uninterrupted production of the guaranteed shape for 24 hours cycle.
□ The line nominal productive capacity could undergo some changes in operation of additive type
and quantity. (+/- 10%)
