At the end of the lesson, the learners are expected to:

Demonstrate how to measure ingredients according to recipe requirement.

It is important to follow the correct technique for measuring and weighing. Weigh and
measure your ingredients for a recipe before combining. This is your mise en place, meaning
all your ingredients are in place before you start preparing and cooking.

Accurate techniques in measuring are as important as the tools for measuring. Therefore,
always observe the following procedures:

Measuring Techniques

 Dry ingredients – spoon or scoop ingredient lightly into spoon or cup, and then level
top with flat surface.

 Liquid ingredients – fill measuring container and then place container on a level
surface. Use your eye to be sure the bottom of the liquid curve (this is called the
meniscus) is at the appropriate measure.

Dry Ingredients using measuring cups and spoons:

 Rice and flour. Fill the cup to overflowing, level-off with a


spatula or with a straight edged knife.

 Sifted flour. Most cake recipes call for sifted flour. In this
case, sift flour 2 or 3 times. Spoon into the cup
overflowing, level off with a spatula.

 Refined sugar. Sift sugar once to take out lumps, if any. Spoon into cup and level off
with a spatula. Do not pack or tap the sugar down

 Brown sugar. Pack into cup just enough to


hold its shape when turned out off cup.
Since brown sugar has a unique moist
texture, it needs to be packed into a dry
measuring cup. Firmly press brown sugar
into the cup with your fingers or the back of
a spoon. Level with the rim of the cup. Brown sugar should hold the shape of
the cup when it is turned out.

Using Measuring Spoons

 For dry ingredients such as flour, sugar or spices, heap the ingredient
into the spoon over a canister or waxed paper. With a metal spatula or
flat side of a knife, level with the rim of the spoon.

 Level a measuring spoon with straight edge of a knife


to measure small amounts of salt, pepper, leavening
agents or solid fats.

 For shortening or butter, spread into spoon and level off. For
liquids, pour into measuring spoon over a bowl or custard cup.
Never measure over the batter, because some may spill and you
may end up with too much in the batter.

 Measuring Stick Butter- the wrappers for sticks of butter come


with markings for tablespoons, 1/4 cup, 1/3 cup and 1/2 cup. Use
a knife to cut off the desired amount.

 Measuring Sour Cream and Yogurt-spoon sour cream and yogurt into
a dry measuring cup, then level the top by sweeping a metal spatula or
flat side of a knife across the top of the cup.

Measuring Liquids

There is a difference between liquid and dry measuring cups, so it’s


important to have both on hand.

To measure liquid, place a liquid measuring cup on a level surface.


View the amount at eye level to be sure of an accurate measure if
using a traditional measuring cup. Do not lift cup to check the
level. Some newer liquid measuring cups are made so that they can
be accurately read from above.

Weighing Techniques

 If a fixed dial, weigh the container you plan to use to weigh food. Use a permanent
marker to write the weight of the container on the bottom of the container so you do
not have to do this step again.

 If an adjustable dial, place container on the scale, then “tare” the scale by moving the
dial indicator to the zero mark. If using an electronic scale, simply press the “tare”
button to zero the scale.

Rules for Weighing Ingredients

 Be sure the pointer is on “0” when you begin.

 Place the container for the ingredient on the platform.

 If using a scale with a fixed dial, place the container on the platform;
record the weight of the container. Add the ingredients until the total
weight equals the required weight, plus the weight of the container.

 If using a scale with an adjustable dial, place the container on the


platform and turn the pointer to “0.” Add the ingredients until the dial
reflects the required weight.

 If using an electronic scale, press the tare button after the container is
placed on the platform.

WHICH IS BETTER – MEASURING OR WEIGHING?

 It is more accurate and easier to use a scale to weigh ingredients, especially dry
ingredients. Food products vary in amounts of air, which can affect volume when
measured by different people.

 Follow the recipe carefully to weigh and measure with precision.

 Accuracy is very important when weighing ingredients and helps the school chef
produce consistently fabulous foods every time.

into the food, check the temperature, and then remove it.

Learning Objectives:
 Discuss the advantage of using proper measuring tools in measuring ingredients.
 Discuss the disadvantage of not using proper measuring tools in measuring
ingredients.
KEY CONCEPT
 Some dishes, especially baked goodies, need measured ingredients. This is
why cooks need to gauge ingredients accurately to have the baked good turn
out well.

 In order to be a professional cook, you can’t just rely on your instincts, you
have to be reasonable. This is why you just can’t put in what you think or feel
will work. It is crucial that the right ingredients in the right amount are mixed
together. After all, it is all about the right balance!

 Ensures the Right Taste of the Dishes. The different dishes have different
tastes. The kinds of ingredients and their measurement hugely affect the taste.
For example, when you are cooking beef steak, it won’t have that rich,
delicious taste if the ingredients are not properly measured. When you are
baking cakes, you won’t achieve the right consistency and texture if the
ingredients such as flour, corn starch, sugar and others are not properly
measured.

 A chef friend once remarked that it was easy for chefs to hide their sins by
simply adding more fat and salt to a recipe. He would say, "You can make bad
food taste better with more butter or salt, but it is better to just make great food
with the right amount of ingredients." I believe that he's right and that
measuring is key to great food. So when I cook, I measure. This is also one of
the simplest tips for reducing calories and eating healthy. (cited from Dr.

 Whether you are cooking at home or you are a professional chef, measuring
out ingredients correctly is the secret behind creating the perfect recipe. People
always debate and argue, whether professional chefs should also take time in
measuring ingredients in the kitchen.

 Is it so important? One must have seen or heard professional chefs adding a


pinch of the special ingredient just to create something innovative or
interesting, but this doesn’t mean that a perfect dish can be prepared by adding
ingredients just on one’s whims and fancies. One has to follow the correct
measurements to achieve the right combination and taste.

 When you are cooking at home or following some recipe, following the
instructions and measuring out ingredients is not difficult, the difficult part
comes when you don’t have the needed measuring cups or spoons, and you are
required to convert measurements according to the tools available in your
kitchen.

 To make things simple for you, a table showing the conversion of common
units of various kitchen measuring tools was created.
