GINGERBREAD LOAF WITH SPICED ALMOND DRIZZLE

INGREDIENTS

1 cup (135g) spelt flour (or gluten free)

1 cup (100g) almond meal

4 tsp ground ginger

1 tsp ground nutmeg

1 tsp ground cinnamon

1 tsp baking powder

2 large eggs

80ml milk (or dairy-free alternative)

1⁄
3 cup (80ml) maple syrup

1⁄
4 cup (60g) coconut oil melted

1⁄
2 tsp vanilla extract

Almond Drizzle

1 tbs (20g) almond butter

1 tbs (20g) coconut oil melted

1 tsp maple syrup

1 tsp ground ginger

METHOD This method is based on 12 servings

1 Preheat oven to 355°F and line an 8 1⁄2 x 4 inch loaf tin with baking paper.

2 In a large mixing bowl combine flour, almond meal, spices, baking powder and salt and mix well.

3 In a separate bowl whisk eggs, milk, maple syrup, coconut oil and vanilla together. Add to dry
ingredients and mix thoroughly.

4 Transfer batter to loaf tin and bake for 35 minutes or until golden and cooked through. Allow to cool
in tin for 5 minutes before removing and transferring to a wire rack to cool.

5 Combine drizzle ingredients in a small bowl, drizzle over cake, slice and serve.
