Common Culinary Terms Used with Regard to Sandwiches

Learning Objectives:
After reading this INFORMATION SHEET, you must be able to:
1. Identify the common culinary terms on sandwiches.
TERM DEFINITION
Baguette a long, narrow loaf of French bread.
Baps a Scottish “morning” bread often made with tender
pillow of dough, milk, lard, and butter.
BLT a sandwich containing Bacon, Lettuce and
Tomato, all sandwiched between slices of bread,
optionally toasted.
Bookmaker’s an Old English toasted/grilled steak sandwich
Sandwich with mustard. Usually served cold.
Club Sandwich also called as Clubhouse Sandwich. A type of
sandwich most often served as a double-decker
sandwich with chicken, bacon, tomato, lettuce,
egg and mayonnaise. Held together by cocktail
sticks.
Cold Sandwich a two slice of bread with spread applied with cold
fillings.
Doyley paper sheet placed under sandwiches to stop
them from sticking on the plate.
Fillings food items such as meat, fish, vegetables or fruits
tucked between the two slices of bread.
Finger Sandwich sandwiches that are cut into strips rather than
square
Focaccia an Italian flat bread, usually topped with salt and
olive oil.
Garnishes edible decorations used to enhance the
appearance of sandwich
Grilled Sandwich a sandwich prepared by grilling or toasting
Guacamole a thick mixture of mashed avocado, tomato,
onion, and spices usually used as spread or dip
Hot Sandwich consists of hot fillings usually meat with other
food items like tomato, onion and cucumber which
are not hot
Layering laying multiple fillings into a sandwich in specific
order.
Loaf Bread a shaped mass of baked bread, sliced before
eating.
Monte Cristo is a sandwich of ham/turkey and cheese coated in
Sandwich egg and grilled or deep fried.
Naan Indian style flat bread
Open Sandwich also known as Open-faced sandwich, consisting of
a piece of bread base with one or more fillings on
top
Panini an Italian sandwich made from a small loaf of
bread, often cut horizontally and filled with salami
ham, meat, cheese and other food, and sometimes
served hot.
Pinwheel spiral shaped sandwich, normally with soft fillings
Points bread made from square bread, cut into quarters
would be 4 points
Portioning dividing up of a larger quantity into specific
serving sizes or portions.
Pullman Bread bread is usually made with white flour and baked
in a long rectangular enclosed pan.
Rueben Sandwich Classic corned-beef and sauerkraut on rye bread
with dill pickles and can be toasted.
Sourdough naturally fermented dough baked in loaf pan
Submarine Sandwich a large sandwich consisting of a long roll (usually
12” long by 3” wide) split lengthwise and filled
with layers of various ingredients such as meat,
cheese, tomatoes, lettuce, and condiments.
Tortilla Mexican flat bread used to make tortillas
Whole bread bread made with flour from the whole of the grain,
normally brown in color.
