Welcome! You are about to begin your journey in classification of
desserts!
The activities in this learning activity sheets are used to facilitate your
learning and acquisition of the desired competency in classification of
desserts and their characteristics. Various learning experiences and
activities are provided for you to meet the target skills.
After going through with this lesson, you are expected to:
 give the reason for eating dessert and sweets;
 identify the characteristics of dessert;
 classify dessert according to types of ingredients used; and
 value the importance of dessert as part of the meal.

Dessert is a sweet course or dish such as pastry or ice cream that is usually
served after a meal. Dessert comes in a wide range of flavor, texture, and
appearance. Dessert is a sweeter course that usually follows the main
course.

Reasons for Eating Dessert and Sweets


1. Dessert completes and balances a meal. Their presence on the menu
makes us feel full after a meal and helps to compensate for low blood sugar
levels.
2. Dessert allows you to try flavors and textures that you wouldn't get from
vegetables, meats, or fruits.
3. Dessert is a great way to express yourself. You can create unusual
combinations that you might not have considered otherwise.
4. Desserts aren't "fattening," as some people believe. It's important to
remember that there is no such thing as a fattening food.
5. Dessert will make you feel as if you were a kid once more. A desire to
improve your mood by consuming sugar is another element to consider. We
produce more of the so-called happiness hormone when we eat sweet foods.
6. Desserts are made to be romantic.

Classification of Desserts and their Characteristics

1. Fruits are the simplest and tastiest dessert


since they are healthy, tasty, and simple to
prepare and serve. Appetizing aroma, simple,
clean washed appearance, and slightly cooled are
all characteristics of good fruit desserts.
2. Cheese is another delicious dessert that is
ready to serve. It is prepared from a range of
milks from cows, goats, and sheep all over the
world. Cheese is differentiated by the type of milk
used, the types of cheese-making operations
utilized, the flavors employed, and the ripening
processes used. Each type has its own distinct
characteristics, attractiveness, and functions.

Types of Cheese
a. Soft Cheese is an un-ripened cheese formed by coagulating casein
(milk proteins) with acid.
b. Semi-Hard Cheese comes in a variety of textures, but they all have
eyes (holes) in them and can be readily sliced.
c. Hard Cheese is manufactured by coagulating milk proteins with rennet
and culture acids.

3. Gelatin is tasteless water-soluble protein


prepared from collagen and used in food
preparation. It is simple to make, inexpensive,
and come in a variety of flavors.

Types of Gelatin on the Market


a. Unsweetened Granular is a gelatin which
must be softened in water before use.
b. Fruit Gelatin is a gelatin which has already
had flavor, color, and sugar added to it.

4. Custard is a dessert or sweet sauce made with


milk, eggs, and sugar. Both baked and soft, can
be made in a variety of ways. Baked custards
that are creamy and delicate can be served in
their baking cups or unmolded and served with
fruit garnishes or dessert sauces.

Types of Custard
a. Baked Custard has a hard shape, smooth, tender texture, rich and
creamy consistency, and an exquisite flavor.
b. Soft Custard has a silky- smooth texture, rich flavor, and pouring
consistency like heavy cream.
5. Pudding is a cooked sweet food made with
flour, fat, and eggs, and usually served hot.
Puddings are simple to make and can be served
with sauces.

Types of Pudding
a. Corn Pudding is made from sweet corn, canned, or cut from the cob,
eggs, milk, and other components.
b. Rice Pudding is made with rice and additional ingredients like
cinnamon, vanilla, and raisins, which are blended with water or milk.
c. Bread Pudding is a dessert made of bread pieces, dried fruit, sugar,
spices, eggs, and milk baked together.

6. Fruit Cobblers aren't the same as fruit pies.


They are two or three inches deep and are topped
with biscuit dough rather than pie crust. They
can be served warm or chilled.

7. Frozen Desserts are commonly cover all


kind of desserts that are meant to be eaten in a
frozen condition such as ice cream, sherbet,
frozen yogurt, sorbet, and other frozen treats are
included in this category.
