How Does the Classic Bread Rise?


Yeast acts by absorbing sugar.

In classical bread background, yeast has three principal


functions: fermentation, rising and activating the gluten.

The gluten in the dough contributes to the ridiculous and


addictive effect that later creates bread, gluten and starch
addiction.
FLOUR
All purpose flour
1 cup = 200 grams of carbs
Low carb gluten-free flours
Almond flour
¼ cup Net Carbs 2g
Protein 5g
Fat 12g
High fat flour- you need eggs and baking powder to provide structure to
baked goods.

Coconut Flour
¼ cup Net Carbs 7g
Calories 60 / Fat 2.5g/ Protein 6g/ Carbs 19g/ Fiber 12g
1 cup = 6 eggs > soaks up liquid like a sponge
sit batter for 10 minutes to absorb moisture
¼ to 1/3 cup of coconut flour = 1 cup all purpose flour

COMBINATION: 3-1 almond flour to coconut flour


OTHER INGREDIENTS
Psyllium Husk Powder
A thickener that helps recipes bind together and create a crumb-like texture
Other thickeners: Protein powder, whey powder
Has binding effect that’s similar to gluten found in wheat flour

Xanthum Gum
Natural thickening agent that is both flavorless and carb-free (soups, home-
made ice creams, jams, baked goods)
