Critical Thinking

1. Write the equation for the reaction catalyzed by catalase.

 (Hydrogen Peroxide) 2H2O2 catalase -> (Water) 2H2O + (Oxygen) O2
2. How does an enzyme alter the rate of a chemical reaction?
 Enzymes are catalysts in biology. Catalysts reduce reaction activation energy. The smaller the
activation energy, the faster the reaction. As a result, enzymes reduce the activation energy of
processes.
3. What is the optimum pH and temperature for salivary amylase?
 optimum temperature (32–37 °C) Optimum pH 7.0
4. What effects do increased pH and increased temperature have on the activity of salivary
amylase?
Increased pH: Salivary amylase did not work in these tubes since pH 5 is acidic and pH 8 is
alkaline, however, the enzyme did act in the tube with pH 6.8 (mildly acidic) and digested
the starch.
Increased temperature: Denatured enzymes are deactivated at low temperatures.
5. In summary, what factors affect enzyme activity?
 Temperature, pH, and concentration can all influence enzyme activity. Enzymes perform best
within specified temperature and pH ranges, and poor conditions can cause an enzyme's
ability to bind to a substrate to be lost.
