2. From your observations, which is the better emulsifying agent, soap, or


detergent?
➢ Emulsifying agents are fat- and water-soluble substances that allow fat
to be uniformly dispersed in water as an emulsion. As a result, detergent
is a better emulsifier. Although soap is an effective emulsifier, detergent
is more water soluble, especially in hard water containing calcium and
magnesium ions. Soap's ability to act as an emulsifying agent is
diminished in hard water.
