Well please could you teach how to prepare the specialty of this business a delicious typical
“Mote con Fritada”

For this part we will help our chefs Diego and Dario who learn the recipe of my mother
Doris and obviously theyput her personality touch.

Hi there, I'm going to talk about preparation of this delicious dish
Let's take a look at our ingredients.
You'll need:
3 kg pork
8 ripe bananas
2 kg potatoes
1 lb mote
1 lb toasted corn
1 lb onion
Garlic and Salt to taste
1.-First in small bowl put the mote, water, onion and sprinkle salt, it has to be mixed in the
bowl.
2.-Then the mix is boiled you could have added the garlic.
3.-To complete the mote preparation is to has to be boiled at a temperature of 1200 You
must have considered the time of preparation ‘don´t forget’.
4.-After in a small bowl, combine the garlic, pepper, salt; sprinkle over pork. In a large
ovenproof coated with cooking oil.
5.-Next the pork is coked, the chef taste the pork and cuts into small pieces
DARIO:
Well, let’s prepare this spectacular Ecuadorian dish:
1.- Put in a pan with enough water, to cook the meat with the salt, garlic and cumin
previously ground, add the onion cut into pieces, let simmer over low heat moving from
time to time until the water is consumed and the meat is soft, check the seasoning, when the
meat is golden remove from the heat and reserve.
2.- Soak the mote previously washed in plenty of water for 24 hours, cook until it is well
open and soft. Wash the potatoes with plenty of water until they are completely clean, cook
with a little salt.
3.- Toasted corn, put in very hot oil and cover, so avoid burning when the corn starts to
burst, move so that it cooks well. When it begins to take a slightly dark color, add red onion
cut a little thick, let cook, remove from heat and add salt to your liking.
4.- Cut the red onion in julienne, put in a bowl with water and a spoon of sugar, let stand
for 20 minutes, wash and reserve. Prepare tomato case and cut into mimosa, add to the
