The development of a 2- to 3-week-cycle menu that repeats itself over the school year with
optional seasonal changes offers substantial benefits in the implementation of the IOM
recommended meal requirements. p. 184
• One set of menus allows the operator to feature items rated as highly acceptable by the
students within daily choices consistent with the standards.
• A 2- or 3-week-cycle menu aids optimizing food procurement, inventory turnover, and daily
production quantities, thereby improving foodservice operations and helping control costs.

reimbursable meal.
