Learning Outcomes:
Upon completion of this module, the trainees must be able to:
Present and serve plated desserts.
Plan, prepare and present dessert buffet selection or plating.
Store and package desserts.
A. Introduction
This unit of competency deals with the skills, knowledge and attitude required to receive and process reservations for a tourism or
hospitality product or service offered for sale through agents or direct to the consumer. As an introduction:
1.) Emphasize practice of excellent customer service as much as possible
2.) Stress the value of employing 5S in the workplace

C. Assessment Plan:
Written assessment: Trainee/s will be assessed on their knowledge in receiving reservation request, recording details of reservation,
updating
reservations and advising others on reservation details.
Performance assessment: Trainee/s will be assessed while giving a demo on receiving and processing reservations.
