Ingredients
5 onion 62 ml coconut sugar
10 candlenuts 500 ml coconut milk
10 garlic 30 g tamarind
4 bay leaves 1 kg chicken
250 g green jack fruit 1.25 litter water
12 g coriander seeds 2 inches bruised galangal
6 g cumin
Instructions:
1. First, cut green jack fruit 1 inch thick. Wash and boil until tender.
2. Grind onion, candlenuts, bay leaves, and galangal until fragrant.
3. Add the chicken pieces; stir fry until chicken changes color.
4. Next, pour 4 cups of water and coconut sugar, bring to boil.
5. Add the green jack fruit and simmer until the chicken and vegetable are tender.
6. Finally, add coconut milk 5 minutes before it’s done, bring back to boil. Serve hot with rice
