Role Description

Role title: Quality Assurance – Food Safety Manager Reports to: Chief Operating Officer

Duration: Permanent – Six months’ probation Location: Bagamoyo, Maputo, Mozambique

Section one: Background to Employer

Mozambique Terramar Trading is one of the largest fast-moving consumer goods (FMCG) distributors in
Mozambique and manages four distribution centres, two are in Maputo Province in Southern Mozambique
(Bagamoyo and Maputo), one in Nacala, Nampula Province in Northern Mozambique and a new distribution
centre in Beira.

The Company procures, processes, and supplies imported frozen meat products and dry goods from global,
regional, and local suppliers to its Mozambican customer base which includes the public, hotels, restaurants,
and cafés (HORECA), retail supermarkets (such as Shoprite and Spar), catering companies and informal
traders.

The Company manages a delivery fleet and employs approximately three hundred and twenty permanent
employees. Daily operations include merchandising, stock handling of FMCG, frozen food processing,
distribution of food products to four distribution centres and customers, and long-haul transport to Nacala in
northern Mozambique.

Mozambique Terramar Trading strives to manage food safety risks within its operations while adhering to
legislation, regulations, and international best practices for emerging markets.

The Food Safety Manager is based at the Terramar Bagamoyo trade centre, in Maputo, Mozambique and is
tasked to develop, implement and achieve an external Food Safety Management System certification.

Section two: Role and responsibilities

The primary role of the Food Safety Manager is to develop, implement, monitor, and improve the QA/QC-Food
Safety management system (FSMS) and achieve certification of the FSMS. This includes developing and
maintaining documentation and employee training. The QA/QC-Food Safety Manager is the team leader for
internal FSMS audits.

This position will oversee the management of the QA/QC-Food Safety team members, and will develop,
implement, and monitor company policies and standard operating procedures related to the Food Safety, and
Quality Assurance programs.

The Food Safety Manager would:

• Actively support the vision, culture, core values, ethics, and goals of Mozambique Terramar Trading.
• Lead by example and develop a high-performance team culture by providing ongoing and actionable
performance-based feedback.
• Ensure adequate technical guidance to the QA/QC-Food Safety team aligned with international best
practice standards while ensuring maximum profitability, productivity, and efficiency.
• Interact with cross-functional teams to ensure the occupational health and safety of the team.
• Oversee, and coordinate audits, lead investigations of quality concerns and complaints (trend analysis,
root cause analysis, corrective actions, and preventive actions), and collaborate with the procurement
and other relevant departments.
• Maintain HACCP program, pest control program and conduct crisis management and mock recalls.
• Supervise daily sanitation of equipment and facility.

• Ensure full traceability of all outgoing food products.

Section three: Background and skills

Minimum Requirements:

• B.Sc. Degree from a four-year college or university, preferably in Food Science or similar training.
• Experience in FMCG or food sector with cold chain and fresh produce.
• Experience with HACCP and/or ISO FSSC and/or Quality Management Systems and/or audit
experience is advantageous.
• High ethical standards.
• Ability to travel to other Terramar distribution centres from time to time and have a Mozambiqan driver’s
lisence.
• Ability to read, write and speak Portuguese and English.

Personal Skills:

• A person passionate about consumer welfare and delivery of top-quality food products.
• Strong analytical skills and disciplined on procedures and accurate record keeping.
• Strong technical skills on food safety principles such as hazard analysis, critical control points.
• Independent with the ability to work with limited supervision, and lead team members by example.
• A strong aptitude and willingness to transfer knowledge and skills to team members. Thus, the ability
to mentor and grow the skills of the team.
• The ability to communicate professionally, and respectfully when under pressure.
