6.

2 Microbiological Control Procedure

Objective
To train workers on the process of microbiological control throughout the processing line.

Scope
All the workers throughout the processing line.

Responsibilities
Manager/ QC officer/ Factory manager

Procedure
i. Worker should know the temperature that has been set during the receiving of the
raw material, processing, and storage.
ii. All workers need to make sure that there is no exchanging equipment with each
other.
iii. All workers need to make sure that apron, gloves, boots, and headwear are wore to
avoid cross contamination to the equipment or utensil that is in contact with the
food.
iv. All the workers should make sure that the products are being store in a correct
temperature following the set guideline.
v. On duty worker during receiving the raw material need to make sure that the
received raw materials are in a good quality and fresh based on the set.

Each time if there is a processing activity
6.3 Microbiological Analysis for The End Products and Water

Objective
To verify the safety and quality of the water use in the processing and the end products.

Scope
Source of water used in the processing line and the end products.

Responsibilities
Manager/ QC officer/ Factory manager

Procedure
i. Sample of potable water and the end products are collected at least 100 gram for
each sample.
ii. The collected samples will be send to the accredited laboratory for microbiological
analysis.
iii. The collected samples will be requested for Total Plate Count and E.coli analysis.
iv. The results will be recorded along with the documents received from the laboratory.

Frequency
Monthly.

6.4 Physical Control Procedure Through Out the Processing Line

Objective
To train and ensure the worker on how to control physical contamination throughout the
processing line.

Scope
All worker involves in the processing line.

Responsibilities
Manager/ QC officer/ Factory manager

Procedure
i. All the workers need to make sure that there is no jewelry are used such as
rings, earrings, watches, bracelet, and needles.
ii. All the workers need to wear headwear inside the operation room to ensure that
there is no hair mixed inside the products.
iii. All the workers need to have short nails. The nails should always clean and did
not use nail polisher or coloring that can cause contamination to the products.
Hand gloves should be worn during the processing operation.
iv. All the workers will be checked every day before starting the daily operation and
penalties will be given if they break the rules.
Frequency
Each time a new employee enters the company.
