Brioche with Cheese (Salt Delayed Method)

No of portions -12
Baking time – 15-20mins
Baking Temperature- 200°C

Ingredients
Refined Flour 250gms
Yeast 15gms
Grain sugar 30gms
Margarine 50gms
Salt 5gms
Eggs 2nos
Milk 30ml
Water 150ml( approx)
Cheese 50gms

Method:
1. Make soft dough using flour, yeast, eggs, sugar, milk and water and prove it for 30
minutes.
2. Melt margarine, cool and add to the dough with salt and knead to form soft, smooth
dough.
3. Divide into 13 portions and round them up.
4. Grate cheese and divide it into 12 portions. Place each portion of cheese into the
center of each portion of dough. Round it up and place it in a greased patty tin.
5. Divide the 13th portion into 12 smaller portions and place them on top of the brioche.
6. Prove till it fills the tin (approx 40 mins).
7. Bake at 200°C for 15-20mins.
