Corn Bread

Polenta 250g
Strong white flour 250g
Baking powder 1tbsp
Sugar 3tbsp
Salt 1tbsp
Eggs 2
Butter 50g
Double cream 250ml
Sweetcorn 125g
Method

1. In the robocoupe place the Polenta, flour, baking powder, sugar and salt. Wiz for 30
seconds.
2. Melt the butter.
3. Break the eggs and mix with the double cream.
4. Add all the liquid to the flour mix and wiz until combined.
5. Add the sweetcorn and pulse the mix until the corn begins to break down.
6. Pour the mix into a pre buttered loaf tin
7. Place into a pre-heated oven 165°C and cook for about 45 minutes until the loaf is
hollow to the tap and has firm crisp sides.
8. Leave to cool on a wire rack.

Note
- For extra flavour you can all fresh chopped herbs and black pepper at the same
time as you add the sweetcorn.
- Use frozen blanched sweetcorn that has been defrosted.
