1. Suggest ONE (1) functional food and state its type of functional food.
Barley contains dietary fiber and is categorized as conventional food. The dietary
fiber contained in barley are barley soluble fiber (BSF) and barley insoluble fiber
(BIF).

2. Describe its beneficial effects on human health.

Barley regulates blood glucose, blood lipid, blood cholesterol and immune system
due to presence of insoluble fiber.

Barley soluble fiber and barley insoluble fiber can help to reduce the total
triglycerides and LDL cholesterol in our body. Insoluble fibers, including cellulose,
some hemicelluloses and lignin, are a group of fibers that are less fermentable and
generally used as faecal bulking agent to improve bowel function. The insoluble
fiber could promote oxidation of fatty acid in the liver.

Barley recovers the liver from injury. Barley fiber gives an effect on hepatic lipids.
Thus, accumulation of fat in the liver can be prevented, and synthesis function and
oxidation status of liver can be improved.

3. Discuss how this functional food affect blood glucose level.


Barley contains barley soluble fiber (BSF) which can help to reduce the blood
glucose level. There is a high amount of β-glucan identified in BSF. The β-glucans
induce Roseburia spp., which produces butyric acid. The insulin sensitivity can be
improved via regulation on histone deacetylases activity, promotion of energy
expenditure and induction of mitochondria function when the caecal level of
butyric acid was increased by BSF. High insulin sensitivity reduces absorption of
nutrients by high viscosity.
