A tasty blend of refined wheat flour and pearl millet flour, designed to create a
distinctive pizza crust, is called millet pizza base. This egg-free pizza foundation is a
tasty and nutritious substitute that will appeal to both eateries and pizza lovers. With
the goodness of millet, which is renowned for its unique flavour and nutritional
advantages, our pizza foundation gives your favourite pizza recipes a healthy
makeover. A pleasant combination of textures and a fulfilling eating experience are
promised with every mouthful thanks to the use of olive oil and a straightforward yet
effective ingredient list.

Ingredients
• 200g pearl millet flour
• 200g refined wheat flour
• 3.5g active dry yeast
• 2.5g sugar
• 150ml warm water
• 10ml olive oil
• 2g salt
Production process
1. Activate Yeast:
• In a mixing bowl, combine warm water (150ml), sugar (2.5g), and active
dry yeast (3.5g).
• Allow it to sit for 5-10 minutes until the mixture becomes frothy.
2. Prepare Dry Ingredients:
• In a mixing bowl, combine pearl millet flour (200g), refined wheat flour
(200g), and salt (2g).
3. Mix Wet Ingredients:
• Add olive oil (10ml) to the activated yeast mixture.
4. Combine Ingredients:
• Pour the wet ingredients into the bowl of dry ingredients and mix until
a dough is formed.
5. Knead Dough:
• Knead the dough until it becomes smooth and elastic.
6. Rise:
• Allow the dough to rise in a covered bowl for approximately 1-2 hours
or until it doubles in size.

7. Punch Down and Second Rise:
• Punch down the risen dough and let it rise again for 30 minutes.
8. Divide and Shape:
• Divide the dough into individual portions and shape them into rounds
suitable for a single pizza base.
9. Pre-bake:
• For a par-baked crust, consider a short pre-baking step to set the crust
structure. Adjust as needed based on commercial preferences.
10. Cool and Package:
• Allow the pizza base to cool completely, and then package it in suitable
quantities for delivery to pizza making shops.
