Jasmin’s Chickpea Bowls

Serves: 4
I NGREDIENTS :
o 2 cans chickpeas, drained and rinsed
o 1 cup of couscous, dry
o 1 cucumber, diced
o 1 tomato, diced
o 1 yellow bell pepper, diced
o ½ red onion, diced
o ½ cup black olives, diced
o ½ cup feta cheese, crumbled
o 1lb. chicken, cooked
o 1 handful of parsley, chopped
o 1 lemon, quartered
DRESSING :
o ¼ cup olive oil
o 2 tbsp. red wine vinegar
o 2 tbsp. lemon juice
o ½ tsp. Dijon mustard
o Salt and pepper to taste

DIRECTIONS :
1. Prepare the couscous according to package directions.
2. In a small bowl, combine all the dressing ingredients and whisk until
combined
3. Combine cucumber, tomato, bell pepper, and onion in a bowl
4. Once the couscous has cooked, allow it to cool, and then divide
between 4 bowls.
5. Add the vegetable mixture, chickpeas, chicken, and olives evenly
across the bowls.
6. Top each bowl with feta cheese, parsley, and a wedge of lemon.
7. Top each bowl with ¼ of the dressing
