Kale and Brussels Salad

Serves: 4-6
INGREDIENTS :
o ¾ cup cashews
o 12 oz. Brussels sprouts, trimmed and shredded
o 12 oz. kale, center ribs removed, chopped
o 1 cup dried cranberries
o 1 red onion, sliced
o 1 cup Parmesan cheese, shredded
o Wavy chips for topping
DRESSING :
o 2 tbsp. honey
o ¼ cup lemon juice
o ½ cup extra virgin olive oil
o 1 tbsp. Dijon mustard
o 2 tbsp. shallots, chopped
o 1 tbsp. garlic, minced
o salt and pepper to taste

DIRECTIONS :

1. Place the cashews, Brussels sprouts, kale, cranberries, and onion in


a large bowl.
2. Combine the dressing ingredients in a large jar. Shake to combine.
3. Pour dressing over the salad. Top with cheese and chips
