CHAPTER 93 : CONDENSED PUDDINGS, GOLDEN AND

TRANSLUCENT, THICK AND CHEWY


‫الباب الثالث والتسعون في َعَم ل الفالوذجات‬
‫الَم ْع قودات والُم َعَّلكات‬
Recipe for condensed pudding
‫صفة الفالوذج‬
You take whatever good white honey you want,
pour it into the pot, burn it under a soft fire, take
‫تأخذ من العسل األبيض اجليد ما شئت وتصبه يف‬
its foam, filter it, isolate it, and take honeyed oil or ‫الطنجري وتوقد حتته بنار َلِّينة وتأخذ رغوته وتصفيه‬
peeled sherbet.1

If the honey is a pound, then take half a pound of
sherry or oil, and take the same amount of starch

Take as much as you wish of good quality white honey.
Pour it into a copper cauldron with a rounded bottom.
‫ وتصَّبُه يف‬،‫تأخذ من الَعَس ل األيبض اجلّيد ما شئت‬
Light a slow fire underneath it, [bring it to a boil], skim ‫ وتأخذ من ْغ ِتِه‬،‫ وتوقد حتَته بناٍر َلِّينة‬،‫َطْنجري‬
the froth and strain it with a large strainer. Return the ‫َر َو‬
‫ وُتعيده إىل الَّطْنجري بعَد أْن‬،‫ وُتصِّفيه ِبراووق‬،‫َو َس َخُه‬
honey to the copper cauldron after you put in it fresh
sesame oil, half the amount of honey used. In a green-
glazed bowl, dissolve starch in cold water, rose water
and camphor. The amount of the starch should be fifth
،‫تطرَح قبله مثل ِنْص ف الَعَس ل َش ْيَر جًا طرّيًا طّيبًا‬
or sixth the amount [by weight] of honey used. The
amount of the liquid should be the same as the weight

of the starch used.

When honey and sesame oil come to a boil, pour the
dissolved starch and stir the pot all the time until the

mixture thickens and the oil separates and comes up.

You need to keep on stirring the pot with the paddle-
like iron spatula so that the pudding does not stick to

the pot.
It is also important to taste the starch before using it to
make sure it has not soured.

You have the option [of making the pudding yellow] by
adding some saffron to the starch liquid before using it.

A recipe for chewy condensed pudding, fit for royalty
‫ِص َف ة فالوذجة ُمعَّلكة َخ ليفّية‬
Put 3 pounds honey in a clean copper cauldron with a
rounded bottom
.‫ فأْلِق فيه من الَعَس ل ثالثة أْر طال‬،‫تأخذ َطْنجريًا نظيفًا‬
and light the fire under it.
.‫وأْو قد حتَته‬
[When it comes to a boil,] skim its froth
.‫وانزْع َر ْغ وَته‬
and pour on it 1 cup olive oil, sesame oil or fresh
clarified butter. Let it cook on a low-heat fire until it
‫ أو الَّس ْم ن‬،‫ أو] الَّش ْيَر ج‬،‫وصَّب عليه من [الَّز ْيت‬
comes to several good full boils.

Finely pound 5 ounces sweet starch in a mortar and
taste it lest it should be sour.
‫ فاْس حقه يف هاَو ن‬،]‫وخذ من الَّنشا [اُحلْلو ثلث ِر ْطل‬

Add water, rose water and crushed camphor or musk

and knead them together.

Do not let it be too thin in consistency. In fact, it will be
better if it is rather thick.

Add one and half grams saffron to it and stir it into the
pot. Keep stirring the pot from the moment you put it

.‫وُح ْسُن َلْو ِنِه من َجْو دة الَعَس ل والَّنشا والَّض ْر ب‬


When the pudding starts to thicken, gradually feed it
with more and more fat, beating all the time until fat
‫ مث‬،‫ وَس ِّقه قليًال قليًال‬،‫ فِز ْد ُه من الُّد ْه ن‬،‫فإذا بدأ َيْنَعِق د‬
starts to separate from the pudding and comes up.
Now, start removing the fat as it comes up while you
‫ وتصّف ي األّو ل فاألّو ل‬،‫اْض ربه أبدًا حىّت يقذَف الُّد ْه ن‬

colour and thickness. Remove all the remaining

the pudding on a platter, God willing.

If you want to make it extremely chewy in consistency,
use more honey and less starch, thicken the pudding as
mentioned above, and let it cook much longer. It will

Condensed pudding made for Isa ibn Ja'far
‫فالوذج كان ُيعمل لعيسى بن جعفر‬
Take as much as you wish of excellent quality honey,
put it in a copper cauldron with a rounded bottom,
‫ وتلقيه يف‬،‫تأخذ من الَعَس ل ما شئت من أْج وده‬
[bring it to a boil] and skim its froth. Now add starch
dissolved in water. For each 1 pound of honey, use 1/2
‫ مث تلقي عليه من ماء‬،‫ وتنزع َر ْغ وَته‬،‫الطنجري‬
cup of the dissolved starch. [Before adding it to the
honey] colour the dissolved starch with saffron or liquid

Let the starch solution be thick.
.‫وْليكن َنشاْس تج ثخينًا‬
‫ واْض ربه ضربًا جّيدًا‬،‫مث أْو قْد حتته بناٍر لِّينة َو قودًا رقيقًا‬
Light a slow fire underneath the pot. Let the pudding
cook on low heat, beating with the paddle-like iron
spatula.

When the pudding begins to thicken, start feeding it
[gradually] with fresh good quality clarified butter or
‫ أو َش ْيَر ج‬، ‫ فَأِم َّده بَس ْم ن جّيد [طرّي‬،‫فإذا ابتدَأ َيْنَعِق د‬
fresh sesame oil.

starch. Continue cooking it until it thickens and

A recipe for condensed pudding made with rice

‫ فتغسله باملاِء احلاّر َغْس ًال‬،‫تأخذ من األُر ّز النقّي اجلّيد‬


Wash picked over good quality rice in hot water and
drain it.
.‫ وجِّف ْف ه‬،‫نظيفًا‬
‫ مث جتعله يف الشمس حىّت‬،‫تفعل به ذلك ثالث َم ّر ات‬
Repeat this procedure three times and then put the rice
in a sunny place and let it dry completely. Pound the
rice as fine as possible and sift it using silken or linen
veil or a piece of silken cloth.
‫ وتنخله بِو قاية‬،‫ مث تطحنه أْنعم ما ميكن‬،‫حيكَم نشافه‬

If you want to use only rice in making the pudding, then
use 1/2 pound rice flour for each 2 pounds of honey.

fresh sesame oil and boil it. Dissolve rice flour, amount

ground camphor. Pour this mixture into the pot and stir

butter gradually [and continue stirring] until it throws
up its fat. Remove the separated fat, put the pot away
from the fire, spread the pudding [on a platter] and
‫ وانثر عليه‬،‫ واْبسطه‬،‫ وأنزله عن النار‬،‫ فصِّفه عنه‬،‫ُدْه نُه‬
sprinkle it with crushed white cane sugar, God willing.

A recipe for condensed pudding made with rice

Choose Levantine rice or Yemenite. These are the best


and whitest rice varieties available. Wash the rice in hot
‫تأخذ أرّز شامّي أو زبيدّي ال يكون أجود منه وال‬
water, and drain it.

Repeat this three times then put it in a clean tub or any
other similar container. Pour on it milk, enough to

Take one part bruised skinned almonds, two parts pure

remove its froth.
Mix honey with sugar and let them cook on medium
fire. Add the almonds and stir the pot until mixture is

Take almonds and Tabarzad sugar, and take a
third of it honey, without foam, and put it in a pot,
‫يؤخذ لوز وسّك ر طربزد ويؤخذ مثل ثلثه عسل منزوع‬

Add as well the [strained] melon. Light slow fire
underneath the pot and cook the mixture [stirring all
‫ [وتوقد حتته بنار‬،‫ وُيصّب فوقه البطيخ‬،‫عليه النشا‬
the time] until it thickens. Start feeding it with fat and
continue cooking [constantly stirring]

until it is done and the fat has separated from the
pudding. [Remove the fat and] put the pot away from
.‫فإذا َنَض َج وأْر خى ُدْه نه ُأنزل عن النار وُج عل يف جام‬
heat. Spread the pudding on a platter.
If you prefer it to be sweeter, add a little sugar to the
melon [when you mash it] and serve it, God willing.
‫ ُح ّلي َبْق ليل ُس ّك ر‬،‫وإْن أحببَت أْن يكوَن أشّد َح الوة‬
.‫ إن شاء اهلل‬،‫ مث ُيقَّدم‬،‫مع البطيخ‬
A recipe for [condensed pudding], condensed and
chewy
‫صفة َمْع قودة ُمَعَّلكة‬
Put in a copper cauldron with a rounded bottom, one
part honey and one third of its weight fresh almond oil
‫ ومثل [وْز ِن ُثُلِثه] ُدْه ن َلْو ز أو‬،‫تأخذ جزًءا من عسل‬
or sesame oil. [Bring them to a boil], remove the froth
and start stirring the mixture vigorously on low heat
‫ [بعد إخراج‬،‫ فُيجعل ذلك يف طنجري‬،] ‫[شريج طرّي‬
until it almost thickens.
]‫ مث [حيّر ك حتريكًا‬،‫ مث ُتوقد حتته بنار لينة‬،]‫رغوته‬
.‫شديدًا‬
Mix 1/2 cup sweet starch [free of any sourness] with
one and half cups water. Add saffron or liquid dye
‫ أو‬،‫[مث ُيؤخذ من النشا اُحلْلو فُيماث مباٍء ] وزعفران‬
extracted from houseleek. Strain the starch solution
using a piece of fine cloth
‫ مث صِّفه ِخب ْر قة‬،‫ مث امرسه حىت َيلني‬،‫ماء بستان أْبروز‬

and take the amount you need for the pudding. The
starch in its dry form [before dissolving it in water]
‫ مث‬،‫مث خذ منه َقْد َر [ِعياِر ه ـ ـ وهو ُس دس ـ ـ جزء يابسًا‬
should weigh 1/6 of the weight of the honey used for
the pudding. Now, pour the starch solution into the pot
and continue cooking on medium heat.
‫ واضربه حىت يثخن وينقعد بناٍر‬،‫ُصّبه] يف الطنجري‬
.‫ُمْع تدلة‬
‫ حىت خيرج ثلَثْي‬،‫ أخرجه أّو ًال أّو ًال‬،]‫[فإذا َقَذ َف ُدْه نه‬
Stir the pot constantly until the mixture greatly thickens
and its oil starts to separate. Remove the oil as it
separates and comes up until two thirds of it is gone.

Put the pot away from the fire and spread the pudding
on a platter that has been greased with pistachio oil.
