Eggless cake recipe (1.

5kg cake,
900gms approx sponge weight)
We shall attach a 1kg recipe below too, but we’re using this one for the class.

Ingredients
Curd………………………….280gms
Sugar ………………………..250gms
Baking powder…………… 1.5tsp tsp
Baking soda………………...1 tsp
Vegetable Oil……………….60gms
All-purpose flour………….240gms
Cocoa Powder………………30gms
Vanilla essence…………….2tsps
Salt……………………………..1pinch

Steps:
(Pre-heat oven @170degrees c) and prep 2 5inch tins of 3inches in height
1)Beat curd and sugar until the sugar gets dissolved, then add baking powder & soda and
beat on high speed for 1.5mins, then leave aside for 5mins.
2)Sift, salt, flour, cocoa together 2-3 times
3) Combine oil into the curd mixture, a little at a time while the mixer is switched on to help
emulsify the oil into the curd mix.
4) Sieve flour & salt really well for two-three times
5) Mix in the flour & salt a mixer a little at a time, then add your vanilla.
6) Bake for 45-55 mins at 170degrees or until the toothpick inserted comes out clean.
7) After the first 28mins, open the oven and cover the tins with foil to avoid cracked tops.

For the buttercream Prep:


Side note: We will not be using all of this in the 1.5kg cake, this buttercream will yield
1100 gms of buttercream) Please wait for further instructions in class.
Butter: 600gms (Thaw butter, should not be too soft, or too stiff)
Sugar: 400gms (Make sure the sugar is super fine and is sieved)
Fresh cream: 120-150gms(Measure and store in fridge till class starts)
White chocolate: 100gms ( Chop even small pieces, keep ready)
Vanilla:2tsp

Ganache prep:
Dark chocolate Compound: 500gms
Fresh Cream:240gms

Keep The chocolate cut in even pieces and keep it ready.
