Introduction
Potato powder manufacturing is one of the growing manufacturing
sector in India. In India, it is estimate that 10 percent of potatoes
produce is used as seed, 20% of produce are wasted due to
inadequate storage and lack of proper transport infrastructure. The
remaining 70% of potatoes are consumed as fresh or processed. Of
these almost 97% percent are consumed as fresh i.e. around 17.0
million tonnes are consumed as fresh potatoes is estimated at 15kg
per annum. Roughly 0.5 million tonnes of potatoes are used for
processing. Potato powder, Granulated and flakes are processed

Potato starch is starch extracted from potatoes. The cells of the root
tubers of the potato plant contain leucoplasts. To extract the starch,
the potatoes are crushed, and the starch grains are released from the
destroyed cells. The starch is then washed out and dried to powder.
Potato starch contains typical large oval spherical granules ranging in
size from 5 to 100 mg. Potato starch is a refined starch, containing
minimal protein or fat. This gives the powder a clear white color, and
the cooked starch typical characteristics of neutral taste, good clarity,
high binding strength, long texture, and minimal tendency to
foaming or yellowing of the solution. Potato starch contains
approximately 800 ppm phosphate bound to the starch; this
increases the viscosity and gives the solution a slightly anionic
character, a low gelatinization temperature of approximately 60 °C
(140 °F), and high swelling power. Potato powder is increasingly
being used in a variety of food preparations like snack foods, soups,
curries and other dishes as a thickening agent. Its use at present is
mainly in hotels, restaurants, but acceptance in household is growing
due to its inclusion in items like ready to cook soups, dals, curries,
etc. Potato flour is a highly versatile raw material that can be used in
several processed food products. Potato cultivars were turned into
flour and used to prepare mash, gulab jamuns, and paratha. The
samples were compared for peeling losses, drying characteristics,
chemical changes, and functional properties.

sweet potato production, which attained a volume of about 92
million metric tons in 2020. The sweet potato flour industry is
expected to grow in the forecast period of 2021-2026 at a CAGR of
