INTRODUCTION:

• Ghee is class of clarified butter that originated in ancient India . It is


commonly used in middle eastern cuisine , of the Indian subcontinent,
southeast Asian cuisine, traditional medicine and religious rituals
• The Traditional recipe of ghee is to boil the raw milk , let it cool to 110 F .
After letting it sit covered at room temperature for around 12 hrs add a bit
of yogurt(curd) to it and let it sit overnight .this makes more yogurt .This is
churned with water ,to obtain cultured butter , which is used to simmer into
ghee
• The term ghee is used to prepare the may food items and also at the same
time the term ghee act a basic key factor to prepare the many sweets in
various parts of the world and also at the same time the ghee is considered
as the good cholesterol value so there by causing no harm to the heart and
maintain the cholesterol
• According to a survey the term ghee is the only thing which is accepted
and used by all the regions for all reasons according to their needs and

industry .The exports from this industry are around 200 crores .The term milk is
basic raw material for taking the ghee. Around 70 percent of milk is used to
produce the milk products like butter and ghee .

After the white the white revolution the flood of milk are produced
and more encouragement and publicity are done and advertisement are done and
adoption of new technology ,research and development , including women are took
part in term of producing the ghee

After the white revolution most of person started the milk factory
and started to produce the ghee and other milk products and also some foreigners
are invested in India to started the milk units to produce the ghee and other items

The industry was established in the year 1995 .This
organization was established by JAHANATHAN PLANISWAMY and for 10
years the company was functioning in small scale units with 30 employees and
the quality of the ghee which is manufactured under this company has a good
quality so the profit margin is high so owner of this organization decided to
start a big unit so he registered his trade mark in 2005 and started
manufacturing in bulk quantity and there are 200 employees are working and
there are 3 managers and there are 5 supervisors .Under this organization the
ghee is manufactured by purchasing the butter from the other small and large
scale dairy and the butter are heated and the butter is converted into ghee.
In the mid of the 2017 the same organization
started to produce the sunflower oil but in six months there is no adequate
profit and when compare to other oil the sales of their oil down and so decided
to withdraw their oil product from the oil markets
