UNDERSTANDING NATURE
What is Nature….?
 Nature is something that surrounds us.
 The classification of nature is done on the basis
of it’s contents i.e. Flora and Fauna.
 These have a direct impact on it.
 Nature is a combination of the water resources ,
the forest resources and the wildlife resources
that are necessary for our sustainability.
The ecological balance

All the components of nature help to maintain ecological

balance. Today in the midst of development and progress
eco values have been lost in the headlong
exploitation of nature.
Time has come for us to return to our roots and rediscover
traditional ways of life lived in harmony with nature.
And if we have a closer look at all these aspects an respect
them we have a lot to learn from this diverse nature that we
have.
Management techniques learnt
from nature
 The management techniques learnt from the
session on nature was :
 The amoeba strategy: the way amoeba
multiplies exponentially , in the same fashion
knowledge multiplies by sharing it .
 The leopard strategy: the way the leopard
makes correct usage of it’s energy while
hunting it’s prey , in the very same way we
should make proper usage of our resources.
The Himalayas – the thirst
quenchers
Water and the task of
conserving it
 The Himalayas and all the other snow clad
mountains of the world are the sources of water,
that quench the never dying thirst of humans.
 The world is running short of potable water. This
makes the task of water conservation vital, as
the existence of the future generations will
depend on our endeavor to save water.
Water Management in indusrial
establishment
 Hotels are the largest consumers of water
for various applications
 According to a survey an average hotel
room consumes 1000-3000 liters of water
per room on an average
 The usage also depends a lot on the
number of restaurant , the location of the
hotel, the type of air conditioning and the
type of water conservation methods that
have been adopted by the hotel.
Types of water consumption
 There are two types of water consumption in the
hotels.
 These are : Primary usage and secondary
usage
 Primary usage is that type of water usage in
which the applications that require the usage of
water that is potable and has no harms for the
human beings with regards to its consumption
by human beings
 Examples are : kitchen applications , bathing
and laundry servicing.
Water consumption in Industrial
establishment(contd)
 Secondary usage comprises of the usage of
water that has been used and recycled for
usage again
 Examples : horticulture , landscaping , floor
wash , cooling towers , toilet flush ,road wash,
car wash etc.
 Secondary usage water is generated from the
primary usages that can be treated to meet the
required standards.

hotels. Water balance for a hotel

Discussion (contd)
 The Negatives:
 In many places despite the positioning of the
tags and the posters to save water the
employees don’t follow the instructions .
 Water wastage is at it’s peak during cleaning and
fumigation specially in the butchery and garde
manger area.
 Excessive quantity of water is used for cleaning
of vegetables .
 Wrong cooking methods are also causing
wastage
This should
surely work
Discussion (contd)
 Suggestions and remedies

 Usage of instruments and gadgets that measure the amount of

water before supplying it.
 Avoid the usage of running water in kitchens for washing and
cleaning
 Co ordination between engineering and kitchens in maintaining
the condition of the taps for providing water
 Recycling of the kitchen water can be done and this can be
used again in the various other departments for different
purposes.
Waste Management in hotels
 Hotels are one of the largest generators of Waste
garbage where the waste that is is
wealth
generated per day accumulates from
thousands to tonnes of garbage
 Waste can be classified into two types:
 Dry garbage and wet garbage
 The kitchen department contributes to
about 50% of the garbage from a hotel.
Waste management in hotels
 Waste management becomes a problem
because of the sheer amount of garbage that is
disposed at a time.
 If this waste is handled carefully then it can be
of great use also but if it is treated and turned
into usable state.
 Example : the waste can be used for making
fertilizers and the wet waste can be used in
making bio gas.
Handling various types of
wastes
 Plastic and glass wastes: these can be
reused in the departments like
housekeeping in order to store the cleaning
agents
 Paper can be recycled to make the paper for
decorative purposes.
 Breakages of glass can be used for the
fencing purposes.
 Waste food can be used by the horticulture
department to make manure.
