SEATING THE GUESTS
Once an appropriate welcoming
and greeting has been provided, it
is now the time to escort and seat
the customers at their table.
LEARNING OBJECTIVES:
After completing the activity you should be
able to:
1. Determine the sequence on how to escort and
seat customer at their table.
2. Conform how the guest be assisted in their
table.
3. Demonstrate escorting and seating the guest.

STEPS AND PROCEDURES
STEP 1 :
ESCORTING
THE GUEST
Escort the guest to the table. You may
say, "This way please." (Show an open
palm and extended arm). While escorting
the guest, always walk ahead of the
guest, at a pace in which they can follow
you. Once you reach the table, you may
say "Will this table be alright with you?"
STEP 2:
SEATING THE
GUEST
Pull the chair toward youself so
that the guest can stand in
between tha table and the chair.
Then gently push the chair
towards the guest to enable the
guest to set comfortably.
STEP 3:
INTRODUCE
YOURSELF AS
FOOD SERVER
When the guest has been seated,
stand at the right side of the guest.
Greet them and r yourself, you may
say "Good morning Ma'am/Sir, My
name is Joseph E. Alano your food
attendant for today and I'm here to
be off service with you."
STEP 4:
PRESENTING
THE MENU
With your right hand, give the
menu to the guest. You may
say, " May I present to you the
menu for your food selection."
STEP 5:
UNFOLDING OF
TABLE NAPKIN
With your right hand, pick up the
napkin by one corner and shake it out
to a triangle and place the napkin on
the lap of the guest with the longest
side facing the guest.
STEP 6:
SERVING OF
BREAD
Use your left hand to carry the bread
basket and use your rigth hand to hold
the serving fork and spoon. Serve at
the left side of the guest. Hold the
bread basket down over the edge of
the table, transfer the bread from
bread basket to the bread plate using
service gear .
STEP 7:
SERVING OF
WATER
Ask for permission first before
pouring water for the guest.
You may say, "Excuse me
Ma'am/Sir, may I pour a water
in your glass." Pour water at
the right side of the guest.
