Utilization of CatFish in

Making Yema Candy

INTRODUCTION

Yema is one of the favorite desserts of the


Filipinos because of its sweet taste. Yema is
Spanish for “egg yolk,” and is most likely a
reference either to its golden-yellow
appearance or to its composition
(traditionally a batter of egg yolks, lime peel,
and sugar).
Statement of Objectives

1. To produce a non-existing product that


integrates aqua fishery products.
2. To originate a yema candy that
incorporates the catfish as main
ingredient.
3. To contribute to the repository of
innovation in product development in
aquaculture.
INGREDIENTS

Catfish ½ kilo
Condensed milk 180 ml
Brown Sugar ¼ kilo
Salt 1 teaspoon
Lemon grass 2 pcs
Butter 1 tablespoon
Vanilla extract 1 teaspoon
METHODOLOGY

Steaming – is a method of
cooking using steam.
METHODOLOGY

Caramelizing – is the browning of sugar,


a process used extensively in cooking for
the resulting sweet nutty flavor and brown
color.
