WAFFLES (Aunt Mary Klassen-Giesbrecht) Aunt Marys waffles were renown for their tastiness.

She made outdoors on a cast-iron antique waffle iron handed down from generations of Klassens (her first husbands family). The waffle iron roduced ! heart-sha ed waffles. "t rested on a frame with a groo#e. The bar on the iron fitted the groo#e so the iron could be fli ed o#er from side to side. A small oil tan$ had been modified to hold the frame. An o ening had been cut out of one side of the bottom of the tan$ to allow Aunt Mary to feed the fire lit there. She used shingles whene#er ossible% for they burned hot% but she also used s lit wood when only that was a#ailable. Kay (&iesbrecht) 'raun ((ncle 'ens wife) also had one of these antique waffle irons and she also coo$ed waffles on an oil-drum sto#e. )owe#er% (ncle 'en u -dated the firebo* and added a gas ring so that she could feed it with a ro ane tan$. This system made it easier to regulate the heat and the ro ane was much easier to come by than wood shingles. Aunt Kays waffles were e#ery bit as delicious as Aunt Marys. +hen " re-acquired an old (smaller) cast-iron waffle iron this year (,-..)% " chec$ed my old reci e with Aunt Kay. Multiply amounts for large crowds. 4 cups flour 4 eggs separated teaspoon soda 2 cups buttermilk teaspoon salt 2 cups milk 4 teaspoons baking powder 8 tablespoon melted butter (4 tablespoons sugar if desired- unt Mary didn!t add sugar."
