Cook oil and flour in dutch pot for 15 to 30 minutes or until golden brown. Add onion, celery, bell pepper to the roux and cook for 10 minutes Add sausage and garlic stir for 1 minute Add stock and turn head to med-low. Bring to a simmer and cook while stirring occasionally for 30 minutes. (add stock if it becomes to think)
