Mango with ginger-mint syrup

Yield: Serves 4

Ingredients: 1 Cup water Cup sugar 1 (2 inch) piece fresh ginger, thinly sliced cups packed fresh mint leaves 2 ripe mangoes, peeled, pitted, thinly sliced Ginger or Vanilla ice cream, or vanilla yogurt, for serving Method of Preparation: 1. Bring water and sugar to a boil in a saucepan and cook until sugar is melted, stirring occasionally. 2. Add the ginger and cook for 1 minute. Remove from the heat, stir in the mint and steep for 5 minutes. 3. Place the mango in a bowl, strain the syrup mixture over the mango, cover, and let chill in the refrigerator for 30 minutes. 4. Serve over ice cream or frozen yogurt.
