LONDON, CANADA.
Since our last Tinware Catalogue was issued many changes have been
made in our facilities, number of employees, and output.
Four years ago we added a large building to our Tinware Factory and
increased our plant to such an extent that we considered our output would
equal the demand for at least ten years to come. But times then did not point
to such rapid advances in the development of the country as have since taken
place, and last year we were forcibly awakened to the fact that an early increase
in plant and buildings was necessary to retain our lead in the tinware business
in Canada.
We make these explanations merely to assure you that we are keeping pace
with the development of the country and can fill your orders for some time to
Trusting that you are sharing in the general prosperity, and wishing to
assist you with our up-to-date and high standard goods, we are,
W. M. GARTSHORE, J. K. H. POPE,
Vice-President and Mgr. Secretary.
Works and Branch Warehouse Notes.
From the following notes some idea of the volume of business and
magnitude of our works may be formed.

* SELF-BASTING
"FAMOUS"
ROAST PANS.
The specially new feature of this pan is the indented top,
which makes it self-basting, the steam rising to the top of the
the roast at the points
pan and condensing, dropping back upon
of indentation, thus thoroughly basting every portion of con
tents. The wire shoes shown, will prevent burning of contents
and allow free circulation of heat under the pan, thus doing avva)
with the inside tray or grate, which collects dirt. The top par
fits inside the lower pan, and hence the steam, rising
to top par
and condensing, must run back into the lower pan and not ink
the oven. Ventilators are provided, allowing a current OI ail
in and OUt Of the pan, and a proper adjustment of thesi
enables the cook to roast or bake to suit family requirements.

228 ICE CREAM FREEZERS AND REFRIGERATORS.
REFRIGERATORS.
IMPROVED
WHITE MOUNTAIN FREEZER.
With Crank.
Its beater and interior mechanism are plated with block tin, and the exterior metal
parts are cast iron, finely galvanized to prevent rusting.
adjusting scrapers, which keep every particle of cream in constant motion, causing il
to freeze faster and more evenly than can possibly be accomplished by any othei
freezer.
We would call attention to a new and important change in the style and adjust
ment of the gear frame of all White Mountain Freezers from two quarts to ten quarts
inclusive.
The new frame made straight with a wedge end on the crank side of the freezei
is
that fits the clamps into a new U-shaped ear. This holds the frame firmly, and attht
same time makes an easy and quick adjustment. It is a decided improvement, anc
adds to the appearance of the freezer.

ICE CREAM FREEZERS AND REFRIGERATORS. 231
System of Refrigeration.
The air ascending from the provision chamber is condensed, or dried, by contact
with all these cold surfaces just as air condenses on the outside of a pitcher filled
with ice water. This condensing also purifies the air, as any particle of matter or
odors from below go with the water and flow off through the waste pipe.
The system, by its cold iron flues and metallic false bottom, presents more cool
ing surface to the air in the ice chamber than any other, and consequently the air
descending to the provision chamber is cooler and dryer than in any other refrigerator.
A PERFECT REFRIGERATOR.
232 ICE CREAM AND REFRIGERATORS.
The insulating or non-conducting supremacy of the Leonard casings is unequalled, there being
no less than eight separate and distinct walls separating the contents from the outside air, in order
as follows :
IU
Of
Air is the best distributor of heat and also the greatest barrier to its transmission according
as it has or it has not freedom to circulate. To prevent the conveying of heat to the inside of our
refrigerators, we make the air space as nearly air tight as possible. This air space also prevents
moisture from within reaching the outside case and swelling it out of shape.
Mineral Wool is a vitreous substance having the appearance of wool. It is made from the
slag of blast furnaces, or other similar material, by throwing a jet of steam against a small stream
of the liquid glass. In this manner it is so expanded that it contains 92 per cent, of air and only
8 per cent, of the original substance. This air is confined and held in position, consequently it
cannot carry heat and makes the best known insulating material. It is also indestructible and will
not mould or smell. The sheathing used in our refrigerators is the Bird Patent Water Proof Odorless
Sheathing. It is called charcoal sheathing by some manufacturers and
sometimes the only material is
used for insulation, and only a single layer at that. By reference to the above diagram you will see
that we give eight walls for insulation. Nothing so good as this has ever before been attempted.
if you would have the best be sure you get the Leonard Cleanable, Mineral Wool, Insulated
Refrigerator.
A PERFECT REFRIGERATOR.
ICE CREAM AND REFRIGERATORS. 233
You know that your house doors bend inwardly at top and bottom in winter,
admitting chilling drafts, caused by the inequality of temperature inside and out
doors. Refrigerator doors will bend similarly for like cause, and it is impossible to
prevent it, except by the use of the Leonard Air-tight Patent Lock. As illustrated in
the cut herewith, these locks have bolts which reach to the bottom
and top of the door on the inside, and when the lever of the lock
is turned the bevel ends of the bolts engage with the top and bottom
of the door frame and draw the door into an air-tight joint. The
strong, well -fitting double hinge on which the door swings secures
the same effect, making the entire door, when shut and bolted, as
close fitting and air-tight as all other parts of the case.
There are many locks now in use which can be adjusted and
which, IF THE; LEVER is OPERATED, the door can be clamped
up very nicely (?) ON ONE EDGE ONLY.
These locks, however, do not help the other edges, the top
and bottom are the most important of all.
Manufacturers agree that Biddy seldom operates a lever if the
matically, and we don t want it to. Biddy has no resource but to leave it wide open.
If it is closed at all it is perfectly air-tight.
