Christmas Ginger Sugar ns Cookies

The Christmas season is fast approaching and with it the need for
delicious gingerbread cookies. This easy recipe produces mouthwatering
cookies straight from my grandmother’s cookbook. Bring these to your
Christmas holiday event; they -and you- will be the hit of the party!

Ingredients: d: unsalted butter, light-brown
sugar, sugar, eggs, molasses, vegetable or canola

Cook time: 17 minutes. Makes 50 cookies.

1/2 cup (1 stick) unsalted butter, softened (not melted)


1 cup packed light-brown sugar
1/2 cup sugar plus extra for rolling
2 large eggs
1/2 cup molasses
2 tbsp vegetable or canola oil
2 cups all purpose white flour
1 tsp baking soda
1 tsp cinnamon
1 tsp ground (powdered) ginger
1 tsp allspice (ground)
1/2 tsp salt
Preheat oven to a temperature of 325°

Step 1: Mix butter, brown sugar and sugar together with mixer on medium speed for
approximately 3 minutes or by hand with spatula until smooth.
Step 2: Mix in eggs, one at a time, molasses and oil until thoroughly blended.
Step 3: Add flour slowly, while mixing, baking soda, cinnamon, ginger, allspice and salt until
mixed evenly. Mixture should now resemble dough.
Step 4: Cover the dough with plastic wrap and refrigerate until firm, or overnight.
Step 5: Spoon out portions of dough about an inch in diameter each, roll each quickly into a
ball. Roll balls in the extra sugar.
Step 6: Line cookie sheet with parchment paper and place the balls several inches apart on the
cookie sheet.
Step 7: Bake for approximately 17 minutes. Cookies should be flat and the centers should be
cooked through but still chewy in texture. Let cool completely on the cookie sheet or on a wire
rack. Store in airtight container up to 5 days.

Serve with milk or eggnog and enjoy!
