Christmas Bourbon Biscuits

Self raising flour 225 g


Salt Pinch
Cocoa powder 25 g
Butter or margarine 100 g
Caster sugar 100 g
Egg beaten 1
Water 1 tbsp
Method
To make the biscuits
1. Sift the flour, salt and cocoa into a mixing bowl.
2. Rub in the butter until mixture resembles breadcrumbs
3. Stir in the sugar
4. Add the egg and water and mix in to a very stiff dough, knead until smooth.
5. Roll the dough on a lightly floured surface to a thickness of 3 mm and cut into
shapes.
6. Transfer these to a baking tray. Reuse the trimmings.
7. Chill for 30 minutes.
8. Bake for 15 minutes in a moderately hot oven 190°C the cool on wire racks.

To decorate

Glacé icing
Food colouring
Butter icing
Hundreds and thousands
Silver balls, or sweets
Coat the biscuits with the icing and decorate, you could try piping on your name or making
patterns with different colourer icings.
