Case Study

Norielyn is thinking of putting up a Restaurant specializing the food s of Northern


Regions. As a student taking up Domestic Tourism and Cuisine, you are tasked to
contribute your ideas on the following:

1. Recommend a Restaurant Concept


2. What are the foods that you can recommend for the Restaurant Menu?
3. Provide a list of things (including the decor) that she needs to include in her
restaurant which reflects the Filipino culture and identity. Explain how it
contributes to the concept.

Restaurant Concept

As a Domestic tourism and Cuisine student, we recommend Norielyn to set up an


ethnic theme concept for the restaurant. She should achieve the right ambiance and lay-
out reflecting the location especially the attractions and tourist spots of Northern Regions.

For her restaurant’s lay-out, she can use bamboos for her tables, chairs and other
decorations. She can even think of using and building up balsa as the highlight or as a
special dining area for V.I.P.’s of for special occasions such as private parties and
receptions.

Restaurant’s Menu

Norielyn can offer different kinds of ethnic specialties from Cordillera,


Calabarzon, and others. She can provide Buro, Kinilaw for appetizer. For main dish, she
can offer Pinuneg, Pinakbet, Bagnet and Pinikpikan. Sinabala, Pancit habhab and Lechon
belly as their specialty dish.

She can also provide wide range of beverage such as fresh citrus juices and wines
from tube such as Basi for this are the most compatible drinks for their dishes.
