Courgette Provencal

Onion 1
Garlic cloves 2
Tomatoes 300g
Courgettes 600g
Olive oil 200ml
Salt and pepper To taste
Method
1. Peel and finely chop the onions.
2. Peel and finely chop the garlic.
3. Skin the tomatoes by blanching in boiling water then refreshing.
4. De-seed the tomatoes and cut into small dice.
5. Top and tail the courgettes then cut into 4 lengthways.
6. Cut the courgettes into 1cm size pieces.
7. Place the olive oil in a heavy based pan with the onions and garlic then cook over a
moderate heat for 10 minutes until softened.
8. Add the courgettes to the pan and cook for a further 8-10 minutes.
9. Place the diced tomatoes into the pan with a little seasoning and cook for a further 5
minutes.
10. Taste and season then serve as required
