fish sauce

• There is a very common condiment, but very
close folk, familiar to indispensable in
everyday life, in the cookery of Vietnam. It is
the homeland, that is condiment sauce. And
speaking of sauce, oft-quoted line of people
is always Phu Quoc fish sauce, it is popular
throughout the country and the world.
• Phu Quoc fish sauce is made from the
anchovies which are a small fish, and have
fragrant, soft flesh, disintegrate and appear
in large numbers from May to September.
• First, the anchovies arrived at the
processing plant from the fishing vessel.
They are choosen carefully by grading the
too big or small fish.
• Then, they will be mixed with salt. Salting
fish is an important element to determine
the quality of fish sauce. Usually fish are
salted at a 10 to 4 ratio so that the fish is not
broken. The layer of fish and grain salt in the
barrels and pressing the compound using a
bamboo grid with mountain rock on it. Then
the compound is stored in the wood barrels.
• We use containers made ​of wood to
increase the flavor products add bold,
unique. They use cylindrical soft wood with
a height of 2-2.5meters, a diameter of
1.5meters, and the capacity of 7 tons. Each
barrel has a lid and a hole at the bottom.
• After 3 months, the fish disintegrates and
the juice of the flesh is let out through a
hole. The juice is poured into the barrel
again to make it penetrate the fish. This is
done every day until most of the flesh is
disintegrated. Now the lid is removed and
the sauce is exposed to sunlight. This last
step of production makes fish sauce red
brown.
Fish sauce is a traditional product with
unique flavor that can not be
described. It provides nutritional value
and economic interests. Therefore we
need to preserve and improve the
quality of this traditional sauce.
