Week 1
June 21, 2017 (8 hours)
Physcico-Chem Laboratory

This was my first day of my training and I learned the basics of what they wanted me to do. We
had some lectures about the uses or functions of the different equipment inside the Physico-Chem
Laboratory. Our supervisors also introduced us to the different areas inside the company. I was assigned
in the Physico-Chem Laboratory where we did some sample product testing.

June 22, 2017 (8 hours)


Microbiology Laboratory

On my second day, I am asked to join my co-trainee inside the Microbiology Laboratory. Our
supervisor introduced me to the different tools and equipment there. She discussed the uses of the
different culture media that they have there. She taught us how to prepare the different agars. Here we
prepared culture media for the testing of the product. We also prepared the sample products by putting
it inside the test tube.

June 23, 2017 (5 ½ hours)


Microbiology Laboratory

I spent my third day inside the Microbiology Laboratory. The samples that was tested on previous
days must be analyze. So remove the plates from the incubator and we tried to look at it if there’s a count
or presence of microorganisms. We tried to look carefully at every plates if there’s a growth of
microorganisms for every parameters. Most of them are positive in yeast and molds. Some have aerobic
plate counts. After that we prepared another media for the new samples that had just arrived.
Week 2
June 27, 2017 (8 hours)
Physico-Chem Laboratory

My second week at the laboratory was exciting. There were a lot of things to do. We tested a lot
of sample products. We tested everything from raw materials to finished goods. We determined the pH
level of the products. Some products were tested through the refractometer for its Brix or sugar. Other
samples must be evaluated in different parameters. For some, they require sensory testing. Products that
are high in salt must be titrated for the determination of percentage salt. Other testing like viscosity and
water activity were done for other products.

Physico-Chem Laboratory

This day a lot of samples from preserves just arrived. It must be tested. Some products have
reached their certain standards but for those that were not able to reach their standard, they must be
resampled. We had titrated a lot of fish sauce today. The whole laboratory was full of its smell. After that

Physico-Chem Laboratory

We’ve done the basic testing of the different products. We also received and checked the
different packaging materials that was delivered on that day if they reached the set of standards and of
there were no defects on the materials. Boxes must be check of there were no misprints and have the
exact dimension. Plastic pouches must also be measured and checked if there were no leakage.

June 30, 2017 (8 hours)


Physico-Chem Laboratory

Raw materials from different suppliers arrived. Nata and some coconut meat were to be tested
before they use them. Nata must be reached the set of dimensions provided by the company. For peeled
coconut and other coconut meats, the pH must be determined before it can be used for the production.
We were also taught about doing some basic paper works inside the laboratory. It was to keep track of all
the records of the products and raw materials.
Week 3
July 4, 2017 (8 hours)
Microbiology Laboratory

Now I was assigned again inside the microbiology laboratory. Here we have done a different
testing off course. We are more concerned on the presence of microorganisms on the different products.
First we have to place the different samples inside the test tube. The preparation of sample requires
carefulness because there may be a possibility that it will be contaminated. After we had prepared the
samples, the next thing to do was to prepare the media. Then we must put the samples on the plates and
incorporate the agar to it. We let them solidify before we incubate them.

July 5, 2017 (8 hours)


Microbiology Laboratory

Today, we entered the production area. Here we did some plate exposure to determine if the
place was not contaminated. Together with that, we must also determine the relative humidity and the
temperature of the place. It was necessary because it may be the factor for the presence of
microorganisms in the place. The plate exposures must also be incubated.

July 6, 2017 (8 hours)


Microbiology Laboratory

A lot of things were waiting to be done for today. We must look if the products tested from the
previous days were positive from microorganisms. There are some that were positive so we need to count
it. We have to record the data and try to analyze the possible reasons why it was positive for that certain
microorganism. More samples arrived at it need some testing. We did everything, sample preparation,
media preparation and the actual testing of the products. After that, some of the samples must be turned
over to the Physico-Chem Laboratory.

July 7, 2017 (8 hours)


Microbiology Laboratory

We were asked to do some swabbing inside Plant 1. Every equipment must be swabbed, even
the place. Today we have 120 samples to be tested. It was a big number. Though it’s tiring, still I enjoy
what I am doing.

We looked on the different processes that all the products were undergoing inside the plant. We
try to observe the things that they were doing, the preparation of the raw materials up to its packaging.
Week 4
July 10, 2017 (8 hours)

Physico-Chem Laboratory

Basic testing of the different products were done. Raw materials from different suppliers arrived.
Nata and some coconut meat were to be tested before they use them. Nata must be reached the set of
dimensions provided by the company.

July 11, 2017 (8 hours)

Physico-Chem Laboratory

Some of the food additives that the production use were first tested inside the laboratory. We
test it for its pH level and its viscosity. Sensory evaluation was needed for some products. We make sure
that every sample was tested.

July 12, 2017 (10 hours)

Physico-Chem Laboratory

We helped in bringing some sample in the retention room where it will be place as a reference if
they need to go back to their past production. It can also be used for the determination of the shelf life of
the products.

July 13, 2017 (10 hours)

Physico-Chem Laboratory

Lot of things were waiting to be done for today. We tested a lot of samples and we also did some
paper works. We determined the percentage salt of some cheese sauce. We also tried to test the cheese
cake bits for its moisture content.

July 14, 2017 (10 ½ hours)

Physico-Chem Laboratory

Some food additives arrived again. Sugar, oil and cheese cake must be tested for their moisture
content. Everything went well for today.

July 15, 2017 (8 hours)

Physico-Chem Laboratory

Raw materials like buco regular and buco special arrived. They must be tested for their pH level
before they were used in the production. We did a lot of things today as usual, testing but I enjoy it.
Week 5
July 17, 2017 (10 hours)

We received and checked the different packaging materials that was delivered on that day if they
reached the set of standards and of there were no defects on the materials.

July 18, 2017 (10 hours)


Physico-Chem Laboratory

Today we did the usual thing. Testing of products from the preserves and institutional area. We
also received some raw materials which we tested for pH and brix.

July 19, 2017 (10 hours)

We put the remaining samples in a box. We must label the box according to what’s inside of it.
After that we brought them to the retention room.

Sensory evaluation was needed for some products. We make sure that every sample was tested.
Some products have reached their certain standards but for those that were not able to reach their
standard, they must be resampled.

Microbiology Laboratory

I was asked to join them in the microbiology laboratory for today. It was because one of my co-
trainee was absent that day. Here we tried to place the samples inside the test tube, prepare the culture
media and do the actual testing by placing it on the plates and incubate it.

July 22, 2017 (7 hours)


Microbiology Laboratory

We were asked to do some swabbing inside Plant 2. We used a more advance testing and no the
conventional way. It was a lot easier and not time consuming. You don’t need to wait for days to
determine the result.
Week 6
July 24, 2017 (10 hours)
Phsysico-Chem Laboratory

This was our last week. On Friday we are done with our training. I spent my day inside the Physico-
Chem Laboratory. Supposed to be, I am assigned in Microbiology Laboratory but I didn’t go there. The
reason was that there’s not a lot of things to do there, no samples. So I join my co-trainees inside the
Physico-Chem Laboratory.

July 26, 2017 (10 hours)


Microbiology Laboratory

Today we only have eight samples to be tested. Aside from that there was nothing to do. We still
prepare the samples, we place it in the test tube. I prepared the media that we are going to use. Then we
test the products. Again those products must be turned over to the Physico-Chem Laboratory.

July 27, 2017 (10 hours)


Microbiology Laboratory

Only few samples arrived today. We only have eighteen samples to be tested. I prepared all the
necessary things for the testing, from the samples to the culture media. Unlike those past few days, today
was not so tiring.

Microbiology Laboratory

This is our last day on the training. I enjoy working here. Everything was nice and it all went well.
We learned a lot especially from the people who trained us and guide us all through the duration of our
stay in this company. Hope I can apply this knowledge in the field of my interest.
