Proposed Research Work

Project Title: Design and fabrication of Solar powered Onion (Allium cepa) peeling
machine.

Project Details

 Project Summary

The main goal of the present project is to establish a novel processing technology for
enhancing the multi-purpose commercial processing of onion. An onion peeling machine was
designed, manufactured, developed and evaluated to suit the small and medium processing
units.

 Objectives of Proposed Project

The following are the objectives of the proposed project work.

1. To effectively utilize the solar energy by converting it into electric energy and use it for
processing purpose.
2. To reduce the time of operation as required commercially.
3. To prevent the loss of food product wasted during operation.

 Justification of the Project

Onion has been a popular food for many centuries. Today they are valued for their flavor
aroma and taste, being prepared domestically or forming raw material for a variety of food
processes. Onion peeling is an essential step in producing many of the onion products such as
dehydrated onions, onion powders, onion flavoring, onion salts, onion rings and pickled and
canned onions. The common methods used in modern onion processing industry are lye
treatment, flame peeling and mechanical peeling. Lye peeling and flame peeling methods are
harsh and not suitable for many onion products.

 Technical program of work


OBJECTIVE : To study the description of an onion peeling machine.
The onion peeling machine consists of seven parts namely:-
1. Main Frame
2. Peeling Drum
3. Inlet and outlet opening
4. Collection basin
5. Water supply systems
6. Air supply systems
7. Power transmission system
The peeling drum consists of two circular frames of galvanized metal sheets with
desired thickness, length and diameter (in mm). The inlet and outlet openings were
made of galvanized sheet metal for feeding and for unloading purposes. The
collection basin consists of four parts (the basin chassis, the water and peel collection
basin, the strainer stand and the strainer). The basin bottom is opened with a hole
attached with on/off valve to drain the water. The peeling drum is driven by a single
phase electric motor that is connected to gear box to reduce the speed and to convert
the horizontal rational motion to vertical. A water pump of sufficient pressure is used
to test the effect of compressed water or air in improving the performance of peeling
process.
Design model: Full factorial design with 3 replications
Independent parameters: These are with three levels and the levels will be fixed based on
preliminary trials and approved standard previous research results.

2. Easy machine cleaning and disinfecting.
3. No need to change part for peeling operation.
4. Minimum labor requirement for maximum output.
5. Easy handling of different sizes of onions.
