Warranty

A.J. Antunes & Co. provides the following limited warranty to the original purchaser of all McDonald’s Equipment.

All components are warranted against defects in the material and workmanship for a period of two (2) years. If any part becomes inoperable during the period of this
warranty, A.J. Antunes & Co. will pay labor costs to an Authorized Service Agent to replace the part plus travel expenses.

Technician Mode
Technician Mode can be entered at anytime with the ex-
ception if the unit is in Manager Mode. Follow the steps
below to view the current values of the HEBT-5V.
1. Open the control compartment by removing the
top two screws and pulling down the control com-
partment cover.
2. Press and release the button on the display board
as shown in Figure 1. The display will display
current platen temps and percentage they are
running.

The belts are aligned vertically on the top and bottom rollers. The rollers are not visible when the belts are cor-
rectly positioned because the snaps are properly positioned.

Basic Theory of Operation
General Operation
The High Efficiency Bun Toaster Model HEBT-5V is de-
signed for contact toasting of buns. The toaster design
allows the operator to place buns in the designated
bun slots in the Bun Feeder. The operator can place 2
Heels, 2 Crowns, and a Club bun all at the same time.

Basic Electrical Theory of Operation
When the power cord is plugged into a dedicated outlet,
line voltage flows through a 3-pole terminal and through
a series of filters, a capacitor board, the contactor , the
I/O Board, the Hi-Limits, and one side of the switch.
With all 3 Hi-Limits closed and the power switch acti-
vated, one side of the switch will complete line voltage
to the I/O Board. Then the I/O Board will send 15-20
VDC through the other side of the switch (logic side),
which will activate the I/O board to activate the Display
Board and energize the coil side of the contactor. With
the contactor activated, line voltage is sent to the relays.
The thermocouples monitor the temperature of each
corresponding platen by sending a signal to the Display
board. If the platens are not at set point temperature,
the I/O board activates the corresponding relay that
sends line voltage to the platens. The unit will heat up
until the set-point is reached, at which point the relays
will cycle on/off to maintain temperature.
Basic Electro-mechanical Operation
With the unit powered on, the motor will receive volt-
age from the I/O Board and the conveyors will begin to
rotate. A microprocessor on the I/O Board regulates the
voltage supplied to the motor which rotates the belts.
The conveyors are covered by three different belts
which assist with moving the product through the toaster
and also keep the aluminum platens clean. There is a
compression knob located on the left side of the unit
that can be adjusted based on the thickness of the bun.
With the conveyors rotating and the unit at set-point
temperature, the buns can be inserted in the appropriate
slot in the Bun Feeder with the cut side of the bun fac-
ing the front side of the toaster. The conveyor pulls the
bun through the toaster where it is then contact-toasted
against the Teflon belt that covers the platens. The buns
then fall down into the Heated Base Assembly, where
they will stay warm until used.

As the belts rotate and the toaster up to temperature,
buns can be inserted in the corresponding slot in the
Bun Feeder on the top of the unit. As the buns are
pulled through the toaster with the cut side facing the
front of the unit (towards the user), the bun is contact-
toasted and lands in the heated base assembly that
keeps the buns warm until they are needed. The Heated
Base Assembly receives 208 VAC from the contactor
when the contactor is engaged. The compression set-
tings can be changed from 1 to 7 by using the compres-
sion knob on the left side of the unit. The recommended
setting is 4. When the compression knob is turned, the
cam and the cam shaft turn and adjust to the selected
compression setting.
There are two cams that turn simultaneously at each
end of the toaster by the cam shaft. When the cams
turn, the back plates and Platen C move towards or
away from the front of the unit.

NAME
Power Switch A 250 VAC 20A Double-Pole Single-Throw Switch that is used to initiate the startup sequence.
It receives line voltage at terminal 2. When turned on, it closes & then supplies line voltage out
from terminal 3 through the Hi-Limits. Terminals 5&6 supply the logic side of the switch. The I/O
Board sends 15-20 VDC to terminal 6 on the power switch, and when the switch is activated,
this 15-20 VDC signal goes back to the I/O Board terminal J5.
Input / Output A control board that works directly with the Display Board, distributing power to the necessary
(I/O)Board components within the toaster.
Display Board A control board that has a 112 x 16 scrolling dot graphic VFD (Vacuum Fluorescent Display).
The Display Board monitors the temperatures of the three platens and the control compart-
ment. The Display Board stores the settings and allows the user to change these settings.
Thermocouple There are 3 type ‘K’ Thermocouples consisting of 2 wires, Red (-) & Yellow (+). One thermo-
couple plugs into J6 terminal of the Display Board and the probe end is inserted into a hole in
Platen ‘A’. Another thermocouple plugs into J3 terminal of the Display Board and the probe end
is inserted into a hole in Platen ‘B’. The third thermocouple is plugs into J4 terminal of the Dis-
play Board and the probe end is inserted into a hole in Platen ‘C’. As all three thermocouples
monitors the internal platen temperature, it generates DC millivolts that it sends to the Display
Board (See Millivolt Chart).
NOTE:  At the Display Board, the thermocouple connector plugs into 3 male pins. The cen-
ter pin is positive (+) & MUST always align with the yellow wire. The two outer pins
are negative (-) & either one must align with the red wire.
Platen ‘B’ Solid Single-Pole Single-Throw relay that is located within the electrical compartment. When its input
State Relay coil, (Terminals 3 + & 4 - ) is supplied phased controlled VDC by the control board, it allows the
(SSR) line voltage contacts (Terminals 1 & 2) to close.
Hi-Limit There are three Hi-Limit Thermostats, one for each platen. A capillary tube style, normally

fails/overheats, the Hi-Limit will trip between 360-382°C (680-720°F) & opens the units line volt-
age from the switch terminal 3 to the I/O Board terminal J3.

NOTE:  The terminal block’s center pole is labeled with an ‘N’ but should be interpreted as
‘L2.’ This is the main Terminal Block marked as TB1 in the wire diagram.
Contactor A 4-pole contactor that when its coil side is energized provides voltage to the heating circuit.
Snubber Board A small board that shunts the current created by the high voltage away from sensitive compo-
nents.
Line Filter There are 2 line filters per toaster. A filter used to filter electrical noise.

toaster plug configuration, refer to the Specifications section of this manual.
High There are eight high-temp ball bearings per toaster. They are located at both ends of the two

Drive Shafts Two shafts located at the bottom front & rear of the unit. There are rollers welded to the shafts
along with belt guides that assist in rotating the conveyor belt wraps. The shafts are driven by
the drive chain, drive motor, & 2 sprockets.
NOTE:  Each end of the drive shafts rotates with high temperature ball bearings (total of 4).
Idler Shaft Located in the left and right access panels, the tensioners are spring loaded and will tighten the
Tensioner belts as they stretch to ensure proper tension. The tensioner assemblies also secure the ball

into the toaster as well as transferring heat to the skin side on the bun.
NOTE:  The Main Belt needs to be replaced when it shows signs of wear.
Heel Belt A Teflon belt that wraps around the drive & idler shafts. The belt wrap assists in pulling the heel
of the buns into the toaster as well as transferring heat to the skin side on the bun.
NOTE:  Heel Belts need to replaced when it shows signs of wear.
Crown Belt There are two Crown Belts per toaster. A Teflon belt that wraps around the drive & idler shafts.
The belt wrap assists in pulling the crown of the buns into the toaster.
NOTE:  Club Belts need to be replaced when it shows signs of wear.
Conveyor There are two Conveyor Covers per toaster. The covers retain the heat inside the toaster and
Covers cover the conveyor belts. The front Conveyor Cover has groves to hold the Bun Gauge.
Backing Plates There are two Backing Plates per toaster. The plates retain the insulation for the platens and
help protect the platen element terminals. They also protect the belts during cleaning.
Conveyor Plate There are two support brackets per toaster. The bracket support the conveyor plate behind the
Support Bracket Conveyor Cover Assembly.
Conveyor Cam/ There is one cam shaft per toaster, and 2 cams secured to it. One end of the cam shaft is

matches the thickness of a bun’s crown , heel & Club, the cam pushes the back plate out or in
(depending on the adjustment it is turned to) which in turn compresses the buns up against the
platen for toasting.
NOTE:  If the compression knob is set to 1, the cam is protracted to its maximum. If the
dial is set to 7, the cam is fully retracted.
Conveyor There are two Conveyor Cam Tensioner Assemblies per toaster. When the cam moves the
Cam Tensioner springs on the tensioner keep tension on the cams while the tensioner moves. The Conveyor
Assemblies: Cam Tensioner Assembly’s bracket moves the plate to adjust to the selected setting.
Compression The compression knob is located on the left side panel of the unit and slides on the cam shaft
Knob which adjusts the compression settings. The knob is adjustable from 1-7.
Upper / Lower Located in the left side access panel and used to secure the front and back plates.
Conveyor Locks
NOTE:  The Upper and Lower Locks must be disengaged when removing the belt wraps.
Bun Feeder Located at the top of the toaster and is used to guide the buns to the correct platen for toasting.
The bun chute has four sections: 2x crown, 1x heel & 1x club.
NOTE: Even though there is only 1 slot for the Heel side, the user can insert 2 heels at one
time.

1. Disconnect wires to isolate switch.
2. Turn switch to the “On” position. Verify continu-
ity across terminals 1 & 2, then 4 & 5. Next, turn
switch to the “Off” position. Reading should now
be infinity.
3. Replace if switch fails test.

1. Turn power OFF & unplug the power cord.
2. Remove the Bun Feeder from on top of the

Thermocouples
NOTE: See Platen Thermocouple under “Component
Description & Function” before proceeding.
1. Test platen thermocouple for ohms value: Unplug
thermocouple from Display Board to isolate it.
2. At room temperature, verify 20-24 ohms across
red & yellow wire.
3. Replace if fails test.

To determine if Platen is “overheating” or “under


heating” due to a faulty platen thermocouple:
1. Preheat unit for 30 minutes then monitor the
platen’s surface, or internal temperature.
2. Next, unplug the thermocouple from the control
board. Set your VOM to the VDC scale, 50-200
MV (millivolt) range. PLATEN C
3. Using the provided millivolt chart, determine if the
thermocouple is generating the proper DC mil-
livolts (+/- 1.0 millivolt) at the indicated tempera-
ture.
NOTE: If the unit is under-heating, the DC millivolts
being generated will be much higher than what
they should. If the unit is overheating, the DC
millivolts being generated will be much lower
than what they should be.
4. Replace if fails test.
NOTE: There are three thermocouples, one for each
platen.

To determine if Platen A has failed:
1. Disconnect Black wire #13 from output ‘B’ on the

Replacement Procedure:
1. Remove the Angular Bun Feeder, Bun Feeder and
front Conveyor Cover.
2. Open the right side panel (electrical compart-
ment).
3. Disconnect Platen B wire terminals by removing
the 3/8” nuts from the heating element calrods
control compartment.
4. Remove the front Conveyor Plate Support Bracket
as described in the Testing & Replacing Con-
veyor Plate Support Bracket section of this
manual.
5. Remove the two slotted screws and disconnect
the Platen A wires from the calrod terminals.
6. Remove the four slot screws located on the back
plate.
7. Remove the two slotted screws for the Hi-Limit
probe plate and remove the Hi-Limit probe.
8. Remove the Platen A thermocouple from the left
(compression) side of the toaster.
9. Remove the Platen B thermocouple and Hi-Limit
probe from the right (control side) of the toaster.
10. Slide the platen out of the toaster by lifting the left
side up first then slowly sliding the Platen B termi-
nals out from the electrical side of the toaster.
NOTE: Both Platen A and B are one casting and must
be replaced together.
11. Follow the above procedures in reverse order for
reinstallation.
12. Test unit for proper operation.

1. Remove the Angular Bun Feeder, Bun Feeder,
and rear Conveyor Cover.
2. Remove the rear Conveyor Cover Plate Support
Bracket as described in the Testing & Replac-
ing Conveyor Support Bracket section of this
manual.
3. Remove all wire ties holding the Platen wires,
Thermocouple, and Hi-Limit Capillary Tubing and
remove the Hi-Limit Probe and Thermocouple
Probe from the Platen.
4. Switch the Compression setting to the lowest set-
ting, 1.
5. Remove the 3/8” nuts, washers, and wires off the
calrod terminals.
6. Remove the four 11 mm bolts securing the Platen
C plate assembly in place.
7. Slide the whole plate assembly with Platen C out
through the compression side of the unit.
8. With the Platen C Plate Assembly removed from
the unit, remove the 4 slotted screws securing the
Platen and remove the Platen.
9. Follow the above procedures in reverse order for
reinstallation.
NOTE: There are two different size spaces for the
Platen. The thicker spacers go on the bottom
and the thinner spacers go on top.
10. Test the unit for proper operation.

3. Access the side control compartment.

holds the Hi-Limit in place and gently slide the
hi-limit out.
5. Disconnect Hi-Limit wires.
6. Remove the Front Conveyor Covers by lifting the
conveyor cover up and pull out.
7. Remove the Main Belt as describe in the Testing
& Replacing Main Belt section of this manual.
8. Remove the Backing Plates as described in the
Testing & Replacing Backing Plates section of
this manual.
9. Remove the two slotted screws to remove the Hi-
Limit cover plate to access the Hi-Limit bulb.
10. Cut of any wire ties holding the Hi-Limit capillary
tubing and pull the capillary tubing through to the
electrical compartment.
NOTE: You may need to remove the Conveyor Support
Bracket to access all the wire ties.
11. Remove Hi-Limit from unit.
12. Reinstall new Hi-Limit in reverse order.
13. Test unit for proper operation.

Testing and Replacing Drive Motor
(Conveyor Motor)
NOTE: See Drive Motor (Conveyor Motor) under “Com-

Testing motor values:
1. Press and hold the Menu button for 5 seconds.
The control panel displays “A Platen.”
2. Press the RIGHT arrow button until “Motor” ap-
pears on the display followed by three sets of
numbers. For example:

Motor 3302 301 3300

If not, test the motor tachometer and windings
(see below).

1. Test fan coil for resistance. Disconnect wires to
isolate fan coil & verify 1.3kΩ to 1.7kΩ across its
terminals. Also disconnect the wires from the fan
once one of the Platens have reached 66 degrees
Celsius. Check for 200 - 240 VAC across wires.
If voltage is present and fan doesn’t turn, replace
the fan (P/N 7000913)

To determine if the contactor is faulty:
1. Check resistance across the contactor coil,
reading should be around 550Ω to 600Ω. If not,
replace contactor.
2. Check voltage across wires White #24 & Yellow
#25, is there 200-250VAC present?
3. If there is and contactor doesn’t engage, replace
contactor.
4. If there is line voltage across wires: White #24 &
Yellow #25, check across:
• L4 to T4
• L3 to T3
• L2 to T2
• L1 to T1.
5. All should be reading 0 VAC, if any are reading
line voltage, replace the contactor.
NOTE: Leave wires White #24 & Yellow #25 connected
to the coil side of the contactor when checking
voltage.
Replacement Procedures:
1. Turn power OFF & unplug power cord.
2. Access the bottom control compartment.
3. Disconnect the Contactor wiring (mark for reinstal-

1. Isolate the Capacitor Board by disconnecting the
wiring.
2. Check the capacitance across terminals T1 to T2.
Is there 15μF to 19μF? If not, replace the Capaci-
tor Board.
Bypass Procedures:
1. Turn power OFF & unplug power cord.
2. Wait for two minutes for the capacitors to dis-
charge.
3. Access the bottom control compartment.
4. Disconnect the Capacitor Board and strip the
wires and cap the wires with wire nuts.
5. Test unit for proper operation.
NOTE: The Capacitor Board is no longer used and if
found faulty, it needs to be bypassed

Assembly

Test Procedure:
1. Disconnect wires from heating element that con-
nect to the right side of the contactor, isolating the
heating element.
2. Check the resistance across the two wire ends.
Reading should be 0.9kΩ to 1.1kΩ for Mfg. No.
9210840, 841, 842, 844, 847, and 848. It should
be 0.8kΩ to 0.9kΩ for Mfg. No. 9210845 and 846.
3. Replace if heated base assembly fails test.
Replacement Procedures:
1. Remove the Bun Feeder from on top of the
toaster.
2. Remove the access panel on the bottom of the
compression side the of the unit by remove the
two bottom Philips screws.
3. Remove the 3 slot screws inside the panel.
4. Access the side control compartment.
5. Remove the screw 3 slot screws in the side con-
trol compartment secure the Heated Base Assem-
bly.
6. Remove the slotted screws in the left and right
hand side of the landing zone.
7. Remove the 5 slot screws on the front of the land-
ing zone.
8. Remove the Heated Base Assembly.
NOTE: The Heated Base Assembly is silicone in place,
it may be difficult to remove.
9. Follow the above procedures in reverse order for
reinstallation.
10. Test unit for proper operation.
NOTE: Re-silicone the Heated Base Assembly.

damaged or worn, they must be replaced.
NOTE: There are eight High Temperature Ball Bearings,
one for each side of each idler and drive shaft.
Replacement Procedures:
To remove Drive Shaft bearings from the drive side:
1. Remove the Drive Sprockets as described in the
Testing & Replacing Drive Sprockets section of

2. Remove the 13mm aluminum spacers from behind CAP
the Drive Sprockets.
3. Remove the Idler Sprocket Assembly as described
in the Testing & Replacing Idler Sprocket As-
sembly section of this manual.
4. Remove the High Temperature Ball Bearing(s).
5. Follow the above procedures in reverse order for
reinstallation.
6. Test unit for proper operation.
To remove Idler Shaft bearings on either side:
1. Remove the Idler Shaft Tensioner Assembly as
described in the Testing & Replacing Idler Shaft 3/8” NUTS

The Drive Shafts are usually trouble free; however if BEARING
they appear physically damaged or worn, they must be CAP
replaced.
NOTE: There are two Drive Shafts.
Replacement Procedures:
1. Turn power OFF & unplug the power cord.
2. Remove the corresponding belts as described 10 mm NUTS
in the Testing & Replacing Main, Heel, and/or (CIRCLED)
Crown Belt(s) section of this manual.
3. Remove the four 10mm nuts from the Bearing
Cap. Remove the Bearing Retainer Cap.
4. Remove the bearing and two washers.

6. Remove the Support Rod as described in the

7. Slide the Drive Shaft as far as possible towards

4. Push/pull the Drive Chain Tensioner Sprocket

Over time, the Main Belt will begin to show signs of
wear. This wear appears in the form of tears or discol-
oration of the belts, at which point the belt should be
replaced (refer to Maintenance section of this manual).
NOTE: The Main Belt should be maintained as de-
scribed in the Maintenance section of this
manual.
NOTE: Belts are consumable items and are not covered
under warranty.
Replacement Procedures:
1. Turn power off and unplug the power cord.
2. Remove the Bun Feeder from the top of the
toaster.
3. Remove the Front Conveyor Cover by lifting up Tense Tense
and away from the toaster.
4. Set the compression knob to 4 and 7.
5. Unlock the latch and open the left side panel.
6. Face the front of the toaster. Use both hands and Loose
push down on the front conveyor roller and pull Loose
towards you. This removes tension and locks the
roller in place.
7. Lift the upper conveyor lock. Then rotate down
so it rests on the cam shaft of the rear conveyor
roller.
8. Pull down the lower conveyor lock.
9. Using a utility knife, cut the belt as described in
the Maintenance section of this manual.
10. Remove the belt from the toaster and discard the
belt.
11. Follow the above procedures in reverse order for
reinstallation.

port Bracket

The Conveyor Plate Support Bracket are normally
trouble free; however if they appear physically damaged
or worn, they must be replaced.
NOTE: There are two support brackets; one for the front
conveyor plate and one for the rear conveyor

Replacement Procedures:
1. Turn power OFF & unplug the power cord.
2. Remove the corresponding Backing Plates as
described in the Testing Backing Plates section of
this manual, to gain access to the Conveyor Plate
Support Bracket.
3. Once the cover is removed, remove any of the 8
mm (5/16) Hex Head screw from the top of the
plate that are still holding the support bracket in
place.
4. Remove the 3 5/32 Allen screws from within the
side control compartment for the corresponding
bracket that is being replaced.
5. Slide out the bracket from the toaster.

The Conveyor Cam/Shaft is normally trouble-free;
however if either appear physically damaged or worn, it

NOTE: There are two cams mounted to the cam shaft, Control Cam
one on the control side of the toaster and other
on the compression side of the toaster.
NOTE: The Cams are marked ‘R OUT’ and ‘L OUT’. ‘R
OUT’ should facing out on the right hand side
of the unit and ‘L OUT’ should be out on the left
hand side of the unit.
Replacement Procedures:
1. Turn power OFF & unplug the power cord.
2. Remove the Bun Feeder and access the Com-
pression side panel.
3. From the Compression Side of the toaster, loosen
the cam 3/32 Allen set screw.

The Conveyor Cam Tensioners are normally trouble-
free; however if it appears physically damaged or worn,
it must be replaced.
NOTE: There are two Conveyor Cam Tensioner Assem-
blies: one on the control side of the toaster, and
the other on the compression side of the toaster. Bracket
NOTE: There are two different springs used and their Slotted
orientation must be correct or it will affect bun Screw

The Compression Side (Left) Tensioner has
the shorter springs (P/N 0600156) on top and
the longer springs (P/N 0600143) on the bot-
tom.
The Control Side (right) Tensioner has the
longer springs (P/N 0600143) on the top and
the shorter spring (0600156) on the bottom.
Replacement Procedures:
1. Turn power OFF & unplug the power cord.
2. Remove the Conveyor Cam/Shaft as described
in the Testing Conveyor Cam/Shaft section of this 11mm

3. Remove the two springs from the Conveyor Cam
Tensioner Bracket.
4. Remove the two 11mm hex bolts that attach to the
rear plate.
5. Remove the 2 Slotted Screws from the Conveyor
Cam Tensioner Bracket.
NOTE: Be careful not to make contact with the Hi-Limit
while removing parts.
NOTE: Be careful not to lose the two spacers behind
the bracket.
NOTE: There are also spacers located between the
plate and the back side of the bracket.
6. Follow the above procedures in reverse order for
reinstallation.
